Food in the mode of goodness increases the duration of life, purifies ones existence and gives strength, health, happiness and satisfaction. So above all ingredients, one main ingredient in cooking is love.
Mutton croquettes or chicken croquettes are mince rolls made with either mutton or chicken. Blended with a number of spices, these croquettes are rolled into breadcrumbs and then deep-fried.
Serve it as a starter or as a Tea-time Snack with a dipping sauce of your choice. Just combine it with finely sliced Onions, Carrots etc., with a dash of tomato ketchup or Red-Chili Sauce to add a zing to the croquettes.
This crispy mutton croquettes are delicious and sinfully satisfying. The starter is always on our family menu, no matter what occasion or festival it marks for. Every time it comes up with different ingredients though, sometimes with chicken or beef and maybe simply with vegetables for a total vegetarian option. But our all-time favourite is the Mutton Cutlet with minced meat and potatoes, coated with breadcrumbs for crispy crust.

Ingredients
250 grams of Boneless Mutton
1 teaspoon of Ginger-Garlic paste
Half a teaspoon of Salt
Water
2 tablespoons of Oil
1 big size Onion
2 Green Chillies
1 medium size Capsicum
4 tablespoon Refined Flour
Half cup Milk
Half cup of Mutton Stock
1 teaspoon Chilli Flakes
1 teaspoon Oregano
2 medium size Potatoes
Fresh Coriander
Half teaspoon crushed Black Pepper
1 /3rd cup Processed Cheese
Refined Flour
Egg
Salt
Bread Crumbs
Steps
Boil 250 grams of Boneless Mutton with 1 tsp ginger-garlic paste, half tsp salt and 1 cup water in a pressure cooker till tender.
After boiling remove the mutton pieces from the stock and preserve the stock aside.
Shred the boneless mutton finely and keep aside.
In a wok heat 2 tbsp of oil, add 1 medium size chopped onion fry till soft then add 2 chopped green chillies, 1 medium size chopped capsicum and fry it on medium flame for 1 minute.
Then add 4 tbsp refined flour, reduce the flame and stir it on medium to low flame for 4-5 minutes until the rawness of the flour is gone.
Keep the flame low, add 1/2 cup milk, the mutton stock, stir it to avoid lumps and keep mixing till the mixture turns thick.
When the mixture starts thickening add 1 tsp chilli flakes, 1 tsp oregano, half tsp salt and keep mixing for 4 to 5 minutes till the mixture turns into a soft dough.
Keep the flame low, add the shredded mutton, 2 medium size boiled and grated potatoes, some chopped coriander leaves, mix all these ingredients properly and then off the flame and let the mixture cool.
When the mixture has cooled, add 1/3rd cup of processed grated cheese and mix it well.
Grease your hands with oil and make long shape croquettes out of this mixture, you can make 25 croquettes with this mixture.
Arrange them in a plate and freeze it for 2 to 3 hours till it turns hard, then you can store them in a container and use it further.
Take some refined flour in a bowl, beat one egg with little salt, take some bread crumbs in a bowl.
Coat the croquette in refined flour, dip it in egg and then coat with breadcrumbs and deep fry on high flame for 3 to 4 minutes till golden brown and crispy.
Serve hot with chutney or ketchup.

Tips *Can replace Meat/Lamb with Chicken, Beef or Tuna. *Can also be prepared with a mix of Vegetables like Carrots, Beans, Potatoes, Cabbage, Beetroot, Cauliflower, Green Peas etc., *Deep fried Meat Cutlets/Lamb Croquettes taste better comparatively. *Use the right fat, right pan and the right temperature suitable for deep frying, for guilt free eating. *Allowing the Oil to smoke initially will cut down the fat content to an extent. *Do not over crowd the pan while deep frying the Meat Cutlets. *Raw Meat Cutlet patties can be stored in an airtight container in a refrigerator for up to 4 days, or can be frozen up to 1 month.
