Bhuna means “fried” and gosht means “mutton or lamb”. Bhuna Gosht (Mutton Bhuna) is a popular North Indian and Pakistani dish where mutton pieces are cooked in a lip-smacking semi-dry gravy made using lots of onions and spices.
This mutton bhuna gosht recipe was traditionally made in a pot over a slow flame. The mutton was cooked in its own juice for hours until the meat was falling apart from the bones. Then filled in pav with bhuna mutton masala and cheese.

Ingredients
350 grams of Mutton
1 teaspoon of Ginger-Garlic Paste
Half a teaspoon of Salt
2 tablespoons of Oil
1 tablespoon of Garlic
1 Onion
1 Green Chilli
1 teaspoon of Soya Sauce
Half teaspoon of Black Pepper Powder
1 teaspoon of Kashmiri Red Chilli Powder
Half cup of Capsicum
2 teaspoons of White Vinegar
2 tablespoons of Tomato Ketchup
2 teaspoon Red Chilli Sauce
1 Boiled and mashed Potato
Fresh Coriander
Fresh Mint Leaves
Bread/pav
Mayonnaise
Processed Cheese
1 tablespoon of Oil
1 tablespoon Butter
1/4th teaspoon Chilli Powder

Steps
In a pressure cooker take 350 grams of boneless mutton or mutton with bone, add 1 tsp ginger-garlic paste, half tsp salt and half cup of water, mix it then cover the lid and pressure cook it till the mutton is cooked well.
Remember the mutton should be very tender and soft.
When mutton is cooked well on high flame dry up all the remaining water in it.
Keep stirring and mashing it with a spatula until the water dries up and the mutton is mashed completely, then off the flame and keep aside.
Heat 2 tbsp of oil in a pan and add 1 tsp of chopped garlic, 1 big size chopped onion, 1 chopped green chilli, mashed mutton, 1 tsp soya sauce, half tsp black pepper powder and fry it on high flame by stirring it for 3-4 minutes.
After frying it reduce the flame, add 1 tsp Kashmiri red chilli powder, half cup chopped capsicum of any colour, 2 tsp white vinegar, 2 tbsp tomato ketchup, 2 tsp red chilli sauce and fry it for 1 minute and then add 1 big size boiled and mashed potato, some chopped mint and coriander leaves mix it well with the mutton.
Cook for a minute on high flame by mixing it thoroughly then off the flame.
Slit open the pav, apply some mayonnaise or butter on it and add the mutton stuffing into it and spread well.
Then grate some processed cheese on the mutton stuffing and close the pav.
Heat 1 tbsp oil and 1 tbsp butter in a pan on low flame, then add 1/4th tsp red chilli powder and some chopped coriander leaves, stir it well till the chilli is cooked.
Then fry the mutton masala pav in this pan of oil and butter on both sides for half a minute.
Now cover the pan and cook on low flame for 1 minute till the cheese inside the pav is melted.
Serve hot with lemon wedges, sliced onions, mint leaves or salad.

Mutton – This dish is best made using bone-in mutton pieces as the bones release a lot of juice into the curry. Try to get the pieces from the legs of the goat.
If you do not like bone-in mutton, then you can use boneless cubes too. Instead of goat mutton, lamb meat can be used too.
Oil – For that authentic taste, use mustard oil. You can also make it in ghee as well.
Spice Powders – This curry is flavored with basic spice powders such as Kashmiri red chilli powder, black pepper powder etc.
Others – You will also need fresh ginger, garlic, green chillies, salt, and cilantro (fresh coriander leaves) to make this mutton masala.
