Ingredients
10 -12 Dry Chillies
8 tablespoons of Whole Coriander
3 tablespoons of Cumin Seeds
1 tablespoon Fennel Seeds
2 teaspoon Black Pepper
2 teaspoon Mustard Seeds
1 teaspoon Fenugreek Leaves
4 Big Cardamoms
Cinnamon
Nutmeg
15 Green Cardamoms
15 Cloves
7 to 8 Bay Leaves
10 to 12 Cashew Nuts
1 Mace Flower
1 tablespoon Poppy Seeds
2 tablespoon Kashmiri Red Chili Powder
2 teaspoon Dry Ginger Powder
1 teaspoon Turmeric Powder
1 teaspoon Salt
Half kg Chicken
Half tablespoon Ginger-garlic paste
3 tablespoons of Curd
1 teaspoon Salt
2 tablespoons of Chicken Spices
4 to 5 tablespoons of Oil
4 Onions
Half tablespoon Ginger -Garlic paste
Half teaspoon Kashmiri Red Chilli Powder
2 Tomato Puree
1/4th teaspoon Salt
1 cup Water
Coriander Leaves
2 Green Chillies
1/4th teaspoon Chicken Masala Powder
Steps
Preheat a pan on low flame dry roast 10 -12 dry red chillies for a minute then remove them and keep aside in a bowl.
In the same pan add 8 tbsp whole coriander seeds, 3 tbsp cumin seeds, 1 tbsp fennel seeds, 2 tsp whole black pepper, 2 tsp mustard seeds, 1 tsp fenugreek seeds, black seeds of 4 big cardamom, 4 stick cinnamon, half piece nutmeg , 15 green cardamom, 15 cloves, 7-8 bay leaves, 10-12 cashew nuts, 1 mace flower dry roast these spices by stirring for 4-5 minutes till it leaves a good fragrance, then add 1 tbsp poppy seeds and stir for 20 seconds then off the flame.
Add these roasted spices to the bowl of roasted red chillies let them cool down.
After the spices are cool add them to a mixer grinder jar then add 2 tbsp Kashmiri red chili powder, 2 tsp dry ginger powder, 1 tsp turmeric powder,1 tsp salt and grind them into a fine powder .
Your Homemade Chicken Masala Powder is ready.
You can store it in an air tight container and use whenever required.
Wash and dry half kg chicken add half tbsp Ginger garlic paste, 3 tbsp curd, 1 tsp salt , 2 tbsp Homemade Chicken masala powder , mix it well cover and marinate it half an hour.
We are going to make the chicken in a pressure cooker so it will be ready in 10 to 15 minutes. You can cook it in a normal kadai or wok if you want to.
Heat 4-5 tbsp oil, add 4 chopped onions, fry it till golden in color, and then add half tbsp ginger-garlic paste, half tsp kashmiri red chilli powder, puree of 2 tomatoes, 1/4th tsp salt mix it well on high flame.
When it starts boiling cover it with a normal lid and cook on low flame 8 to 10 minutes.
When the tomatoes are done, add the marinated chicken to it, mix it well keep stirring on high flame.
Then add 1 cup water mix it well and pressure cooker. It on high flame till 1-2 whistle and then off the flame and let it rest for some time.
Open the pressure cooker and check the chicken if done, check the consistency of the gravy.
This chicken masala gravy is a semi dry dish, add some chopped coriander leaves, 2 slit Green chilies, 1/4th tsp homemade Chicken masala Powder and simmer it on low flame for 1 minute till oil floats on top.
Off the flame and let it rest for 10 minutes.
Serve it hot with roti and rice.

Tips For a juicier Masala Chicken, marinate the chicken for a good 30 minutes to one hour. Fresh tomatoes always work better than tomato puree. Make sure you slow cook the chicken, as this would enhance the flavour and colour of your dish. If the chicken is fried in the masala until it releases oil, it will have a darker colour. If you prefer a deeper colour, use Kashmiri red chilli powder only.
