This Indian-inspired recipe includes marinated tender chicken, lots of warm spices, and an irresistible sauce. It is definitely a great budget-friendly recipe if you are looking to switch things up for dinner this week!
Of course, there are many versions of butter chicken recipes, but today, I am sharing one that my family and I love. Like our chicken tikka masala, it is certainly not an authentic recipe, but it is made with easy-to-find pantry staples I almost always have on hand. I marinate the chicken with Greek yogurt, lemon juice, garlic, ginger, and lots of spices to make it extra tender and flavorful, then simmer it all in a buttery, spiced tomato cream sauce. It is a total weeknight winner in my house and always satisfies our takeout cravings!

Ingredients
1 medium Onion
3 medium Tomatoes
5 to 6 Garlic Cloves
Half inch Ginger
4 dried Red Chillies
2 Bay Leaf
5 to 6 Cashews
300 gram boneless Chicken
1 teaspoon Ginger Garlic Paste
1 teaspoon Tikka Masala
2 tablespoon Oil
2 tablespoon Butter
1 teaspoon Cumin Seeds
2 teaspoon Dried Fenugreek Leaves
1 teaspoon Kashmiri Red Chilli Powder
1 teaspoon Milk Powder
1 pinch Garam Masala Powder
2 teaspoon Tomato Ketchup
1 tablespoon Butter
Steps
Heat a pot add 1 cup water, 1 medium roughly chopped onion, 3 medium roughly chopped tomatoes, 5 to 6 garlic cloves, half inch Ginger, 4 dried Red Chillies, 2 bay leaves, 5 to 6 cashew and cook it on medium flame for 10 to 12 minutes till the tomatoes are soft.
Heat a pot add 300 gram boneless chicken, 1 teaspoon ginger garlic paste, 1 teaspoon tikka masala, half teaspoon salt, half cup water, boil the chicken till tender.
When the tomatoes are cooked remove the skin of the tomato, remove the bay leaf and grind the mixture into a fine paste.
When the chicken is done remove it and shred into small pieces, preserve the stock.
Heat two tablespoon oil and 2 tablespoon butter in a pan add one teaspoon cumin seeds when it starts crackling, low the flame add 2 teaspoon dried fenugreek leaves, 1 teaspoon Kashmiri red chilli powder and sauté for half a minute then add the grounded tomato mixture, the chicken stock 1 teaspoon salt, mix it and cook till it combines well.
Then add 1 teaspoon milk powder, low the flame, cook for 2 minutes till creamy then add one pinch garam masala powder, 2 teaspoon tomato ketchup mix it well cook for a minute, then add the shredded chicken, mix it add little water as per your requirement for the consistency of the gravy, let it boil then add 1 tablespoon butter and off the flame.
Serve it hot with Naan, paratha, roti, kulcha.

Tips * You can also use boneless, skinless chicken thighs. *If you are using diced tomatoes instead of tomato sauce, you will need to blend the tomatoes and spices in a blender or food processor to get a smooth consistency for your sauce. * Adjust the chilli according to your taste.
