4 to 5 tablespoons Oil
2 Bay Leaves
1 Black Cardamom
4 to 5 Cloves
2 Cinnamon
3 to 4 Green Cardamom
Half teaspoon Whole Black Pepper
1 Star Anise
1 Big Onion
1 kg Chicken
2 tablespoon Ginger-Garlic Paste
1 tablespoon Kashmiri Red Chilli Powder
1 tablespoon Coriander Powder
1 teaspoon Cumin Powder
Half teaspoon Turmeric Powder
2 sliced Tomatoes
Half teaspoon Salt
4 tablespoon Curd
2 tablespoon Biryani Masala
Half cup Fried Onions
500 grams Basmati Rice
Fresh Coriander and Mint Leaves
2 teaspoon Lemon Juice
3 to 4 Green Chilles
2 tablespoon Oil
1 tablespoon Lemon Juice
2 & 1/2 tablespoon Salt
1 teaspoon Black Cumin
2 Green Chilles

Steps
Take a big vessel or pot in which you want to cook the biryani.Heat 4-5 tablespoons oil in the vessel, then add the whole spices 2 bay leaves,1 black cardamom, 4-5 cloves, 2 cinnamon, 3-4 Green cardamom, half tsp whole black pepper, 1 star anise and let the spices infuse for half a minute.
Then after half a minute, add one big, sliced onion, fry the onions till golden then add 1 kg chicken.
Take big chicken pieces for biryani, fry chicken pieces with the onion on high flame till the colour of the chicken changes. Stir and fry for 2 to 3 minutes. Then add 2 tablespoons of ginger garlic paste and fry it for 3 to 4 minutes.
Add 1 tablespoon Kashmiri red chili powder, 1 tablespoon coriander powder, 1 teaspoon cumin powder, half teaspoon turmeric powder and keep the flame low at this point or else the spices may burn, add some splash of water if required.Stir fry it for 2 to 3 minutes on low flame.
Then add 2 sliced tomatoes, half tsp salt and stir fry it for 1 minute, then cover and cook for 10 minutes on low flame till the tomatoes are soft and chicken is tender. Keep checking in between.
Take 4 tbsp curd in a bowl, add 2 tbsp biryani masala (keep a little masala to sprinkle on the rice)half cup fried onions mix it and keep aside for further use.
Take 500 grams of basmati rice and soak them in water for 1 hour before you start cooking the chicken.
Check the chicken cook till 80% done as it will be further cooked when you keep the biryani on dum.
When the chicken is done, add the curd mixture, mix it with light hands then cover and cook 5 minutes till oil floats on top.
Then after cooking it for 5 minutes remove the excess oil from top to use it later.
Add some fresh chopped coriander and mint leaves to the chicken, 2 teaspoon lemon juice, 3-4 slit green chillies and cook for 1 minute.
Now in a big vessel add lots of water keep for boiling add 1 tbsp lemon juice, 2 and a half tablespoon salt, 1 teaspoon black cumin, 2 green chiles, 2 bay leaves when the water starts boiling add the soaked rice and stir it gently.
Cook on high flame till 90%done, then strain the rice.
Fry some potatoes and add in the chicken then spread the strained rice on top of the cooked chicken.
Pour the oil that you have removed from the chicken.By adding this oil it will prevent the rice from getting dry and will give a nice aroma to the biryani.
Sprinkle some chopped coriander and mint leaves, then sprinkle some leftover biryani masala, cover and keep on dum, cook it on medium flame for 15 minutes.
Serve it hot with raita or salad.

Chicken: Use bone skinless chicken thighs or legs in this recipe for maximum flavor and convenience.
