5-6 Dried Red Chillies
1 Tbsp Whole Coriander
1 Tbsp Cumin
6 Green Cardamom
1 Black Cardamom
4 Cloves
Small Cinnamon
10-12 Black Peppercorns
1 Small Nutmeg

1 Tbsp Kashmiri Red Chilli Powder
750 GMS Chicken
1 Tbsp Ginger Garlic Paste
1 cup Curd
1 cup Fried Onions

½ cup Oil
2 Bay Leaves
3-4 Green Chillies

600 gms Basmati Rice
Boil Rice with spices like Cinnamon
Cloves
Black Cardamom
Lemon Juice and Oil
Half Cup Milk
Soaked Saffron in Milk
1 Tsp Kewra Water (OPTIONAL)

2 Tbsp Pure Ghee

Steps
1. In a Mixer Grinder, take 5-6 Dried Red Chillies, Whole Coriander, Cumin, Green Cardamom, Black Cardamom, Cloves, Small Cinnamon, Black Peppercorns, Small Nutmeg, Little Mace and Kashmiri Red Chilli Powder. Grind all the spices in a powder form.
2. Marinate 750 gms Chicken with Ginger Garlic Paste, Curd, Fried Onions, grinded Spices and Salt in a bowl. Cover with the lid and keep it aside for 1 hour.
3. In a pot, heat ½ cup Oil, add Bay Leaves, Green Chillies, Ginger Garlic Paste and sauté it for 1-2 minutes on high flame.
4. Put the marinated Chicken by keeping the flame low. Fry the Chicken for 2-3 minutes on high flame. Cover the pot with the lid ad let it cook for 15 minutes on low flame.
5. After 15 minutes, the gravy is cooked properly (Chicken need to be cooked 80%). Put chopped Mint Leaves, Coriander Leaves, Fried Onions and Lemon Wedges. Switch Off the flame.
6. Boil 600gms Rice with spices like Cinnamon, Cloves, Black Cardamom, Lemon Juice and Oil (Around 90% rice need to be cooked).
7. Place the Basmati rice on the Chicken gravy and pour ½ cup Milk. Put Saffron soaked water and Kewra water on the Rice.
8. Put pinch of Orange color and Pure Ghee. Sprinkle Mint Leaves, Coriander Leaves and Fried Onions on top of the Rice.
9. Place the kneaded dough on the side of the pressure cooker. Put the lid on the pot and seal the lid and the cooking pot tightly with the dough.
10. Cook for 2-3 minutes on high flame. Later lower the flame and cook for 20-25 minutes. After 25 minutes Dum Pukht Biryani is ready to serve.
