Step 1: Prepare the Spice Paste • Crush garlic, green chilies, and ginger on a grinding stone (silbatta) or blend coarsely in a mixer jar.
Step 2: Make the Dough • In a large bowl, add jowar flour, salt, the crushed spice mix, red chili powder, turmeric, cumin powder, and kasuri methi. • Add chopped onion, coriander, sesame seeds, and 1 tbsp ghee. • Add the grated bottle gourd (lauki). Remove the soft seed part before grating. • Mix everything well. Add little water at a time to form a soft, non-sticky dough.
Step 3: Shape the Parathas • Grease a parchment paper or a clean plastic sheet with a few drops of ghee. • Take a small dough ball, place it on the sheet, and flatten it gently with your hands into a round paratha shape.
Step 4: Cook the Paratha • Heat a tawa (griddle) on medium flame. • Lift the paratha along with the paper, flip it onto the tawa, and gently peel off the paper. • Cook for 30 seconds, then flip. Apply ghee or butter on both sides. • Cook until both sides turn golden brown.
