Every Indian cook has to master a Roti recipe. It is one of those hurdles that look small but are huge milestone. Rotis are delicious and are perfect for mopping up curries.

Roti is made of whole wheat flour and nothing else really and is eaten in India with dal and curries.

Some people add salt, some add oil .

It is known by different names in different parts of the country and sometimes there is also a difference in the way you cook it.
Roti/Phulka/Chapati/Rotli are more or less the same thing.
You need a rolling pin and a rolling board to make this flatbread. We call it chakla (the board) and belan (the rolling pin) in hindi.

2 & 1/2cups Wheat Flour
1/2 teaspoon Salt
1 teaspoon Oil

Take 2 & 1/2 cups of wheat flour. You can take as much as flour you want
Add 1/2 teaspoon of salt many people do not prefer adding salt, so it is up to you.
First mix the salt with the flour, then add water little by little to the flour
Add lukewarm water, with this the rotis will turn out to be very soft, but the water should be slightly hot as hot as you can tolerate the heat on your fingers.
We are making this for bachelors and beginners who do not know how to make roti at all. Others who know how to make this must also watch this for some new ideas and information.
Make a ball by adding water, we have almost used 1 & 1/2 cups of water in 2 & 1/2 cups of wheat flour.
It is not necessary that 1 & 1/2 cup of water will be required, so requirement of water depends on the quality of the flour. Use so much water so as to make it semi-soft.
It should not be to hard or not too soft.
With the help of fingers make a little space in between the dough the pour 1 tsp of oil on the flour and cover it keep it for 10-15 minutes .
This is a very important step definitely do it.
Knead it now and it will turn to be soft as we have left it for 15 minutes, if we would have kneaded at that time you need a lot of effort to make it soft .
By keeping it for sometime the Roti will be good soft and secondly the effort will also be less.
With the help of your knuckles, move on the dough and knead it by doing this 3-4 times, now the dough is turned out to be smooth.
Add little by little water at the time of kneading , it should not becomes too soft by adding too much water.
We have to take care of one thing that the dough should be not too hard or not too soft.
Make as many Roti as possible.
It depends on you, some prefer bigger, some prefer for smaller, some prefer thin, some prefer fat so it totally depends on you.
Prepare and make all the balls of the dough.
By keeping the dough balls ready we will not waste much gas at the time of making because one Roti is made then we will prepare the second one.
Prepare all of them first and keep them covered because they will dry.
Dust in dry flour, press the Rolling pin on the corners
The idea will come to you as you keep making .If we roll in the middle, the corners will become thick and will not enjoy eating ,so roll the corners
We have prepared the Roti by rolling it is a bit thin
If you prefer thick then you can take more flour and make it more thicker
The Roti is ready which side should we put on the Tawa is also important.
The side which we have prepared by Rolling it, we have to turn on to the tava .
One more important point we should not cook roti on a low flame the Roti will turn to be rubber type .
Do not have to cook it too much .
With a cloth or tissue, press a little from the other side so it gets cook from all the sides.
Remove the Roti from the Tawa and put it on the stove with the flame on.
Apply ghee to it. This is optional if you do not want apply do not apply.
If you apply ghee the Rotis will remain soft the entire day.

Similar to that done before when it is turn on the first side do not cook the Roti too much that will not let spots appear on it after flipping .
For the second time press it a little with a paper or a clean cloth and remove the Roti from the Tawa and put it in a plate and then apply ghee to it.
Do not let the Roti cool entirely, when the roti is slightly hot, transfer it to a hot pot covered in a towel so that it remains soft for the entire day.
