Ingredients
1 tablespoon Ghee
1 teaspoon chopped Garlic
1 teaspoon chopped Ginger
1 Onion sliced
1 & 1/2 cup Cabbage chopped
Half cup Carrots chopped
Capsicum chopped
1 Green Chilli
1 tablespoon All-purpose flour/Maida
1 teaspoon Red Chilli Powder
1 teaspoon Chat Masala
Half teaspoon Garam Masala Powder
Half teaspoon Salt
1 boiled Potato
Coriander Leaves
2 tablespoons of Water
Chapati
Mayonnaise
Butter
Tomato ketchup
Cheese
Steps
Heat 1 tablespoon ghee in a pan, you can use oil or butter also. Add 1 tsp chopped ginger and 1 tsp chopped garlic sauté for 10-20 seconds.
Add 1 onion sliced, 1 & 1/2 cup cabbage chopped, half cup carrot chopped, chopped capsicum; chopped 1 green chili chopped fry all of them for 2 minutes on high flame. Then add 1 tbsp all-purpose flour and stir fry for 2 minutes on low flame.
Then add the spices 1 tsp red chili powder, 1 teaspoon chat masala, half teaspoon garam masala powder, half teaspoon salt, stir fry these spices on low flame for 1 minute, then add 1 big size boiled and grated potato and mix it well with the help of a spatula to combine with the veggies.
Add chopped coriander leaves and 2 tbsp water to get a separable consistency to spread it on the roti. Mix it well on low flame and check the salt, then off the flame let it cool.
Take one roti apply some mayonnaise on it, take some potato mixture and spread it on the roti to form a thick layer. Cover the whole roti with this mixture, then put another roti on top of this and press it with light hands, so that the roti sticks to the mixture.
Heat some butter in a pan, place this roti sandwich in the pan and let it cook on medium flame for 2 minutes till it turns crispy from the base, then put a blob of butter on top of the cooking roti sandwich and then turn it and cook in the same manner to get crispy roti from both sides.
As soon as you turn the roti sandwich apply some tomato ketchup, spread it all over the roti and put sone mozzarella cheese on top, sprinkle some chopped coriander leaves, cover it and cook for a minute till cheese melts then off the flame.
Cut it and serve or pack it in your children tiffin box.
