Ingredients
2 Tbsp Coriander Seeds
1 Tbsp Cumin Seeds
1 Tbsp Fennel Seeds
10-12 Black Pepper Corns
1/4th Tsp Carom Seeds
1 Cinnamon
2 Green Cardamom
2 Cloves
4 Dried Red Chillies
1/2 Tsp Black Salt
1/2 Tsp Salt
1/4th Tsp Tartaric Acid
Steps
1. In a bowl take Coriander seeds, Cumin seeds, Fennel seeds, Black Pepper Corns, Carom seeds, Cinnamon, Green Cardamom, Cloves and Dried Red Chillies.
2. Heat a pan, add Dried Red Chillies and roast it for two minutes.
3. Put all the other spices and roast it for 4-5 minutes on low flame. Let the spices turn crisp and aromatic. Off the flame and let it cool down.
4. Put all the spices into a mixer grinder jar and grind coarsely.
5. Add Black Salt, Salt, Tartaric Acid and blend to a coarse powder.
6. Magic Masala is ready, store in an airtight container and use as required.
