Mutton Paya curry is a traditional recipe originating from the Mughlai cuisine. It is an exotic, runny, soupy curry made with goat trotters, onion and Indian spices. the popular dish is also known to have medicinal properties and is served with rice, naan, roti or dosas.

Ingredients
• 4 pcs Mutton Paya (Goat Trotters)
• ¼ Cup Wheat Flour
• 4 Cloves
• 1 Small Stick Cinnamon
• 1 Black Cardamom
• 2 Green Cardamoms
• 3 Bay Leaves
• 2 Onions Sliced
• Salt to Taste
• 2 Tbsp Ginger Garlic Paste
• 1 tbsp Coriander Powder
• 2 tsp Red Chilli Powder
• ½ Tsp Turmeric Powder
• 1 Tsp Cumin Powder
• Garnish with Ginger Julienne and Green chilli bits

• To clean the Mutton Paya (Goat trotters) – Wash 4 pieces of Mutton paya with water. • Dry them and add ¼th cup of wheat flour to the bowl. • Coat the trotters with flour and let them lie for 10 to 15 minutes. • Remove the flour from the trotters by rubbing them nicely, with force. • Tip – Doing this would also help remove any hair on the trotter. • Also, scrape using a knife and clean all the pieces. • Wash the trotters thoroughly from water. • For dry spices – In a bowl, take cloves, cardamom, green cardamoms and a black cardamom. • In a pressure cooker, heat oil and put these dry spices to it. Also, add bay leaves and fry them for half a minute. • Add 2 sliced onions (big-sized) to the cooker and fry until golden brown. • Tip – To cook onions properly and tenderly, always make sure to cook them golden brown. Do not fry/ cook them dark brown. • Add the washed trotters in to the cooker. Drain out the excess water from them. • Now, add salt and ginger & garlic paste and fry everything on high flame for 2-3 minutes. • Add coriander powder, red chilli powder, turmeric powder and cumin powder. Make sure to fry these powdered spices on low flame. • Note – Do not fry on high flame otherwise the spices will burn. • Add 3 tbsp water and cook on high flame. Add 1 tbsp of water again and fry the trotters nicely for 7-8 minutes. • Add 600ml of water and let the curry cook on high flame. • Mutton paya curry is supposed to be runny and liquid in consistency. • Add more water (total around 1 litre). Close the lid of pressure cooker and cook on high flame until 1 whistle. • Adjust to low flame and cook for another 10-12 minutes. • Note – The time required to cook trotters depends upon the size of trotters. If they’re big in size, you would need more time to cook them. Here, we’re using small trotters so we need around 15 minutes of time. • To check if the trotters has cooked well, touch and see if it has turned soft. • Note – Make sure the meat does not separate from the bone. • The consistency of gravy/ curry should be liquid. If you want more gravy, add more water and cook. • Serve the curry with chopped green chillies and ginger julienne.
