Ingredients
• 10 Tomatoes
• 2 tbsp Olive Oil
• 1 tbsp Chopped Garlic
• 1 Chopped Onion
• Salt to taste
• 1 tbsp Kashmiri Chilli Powder
• 1 tsp Chilli Flakes
• 1 & ½ tsp Mixed Herbs
• ½ tsp Black Pepper Powder
• 1 & ½ tbsp Tomato Ketchup
Steps
• In a bowl, take 10 medium-sized tomatoes. They will weigh about 1 kg in total. • Wash them thoroughly, slice off the top part of tomato and make cuts on all tomatoes. • In a pot, boil 1 litre of water. When the water reaches a boiling point, lower the flame and put tomatoes in the pot. • Turn to high flame, cover with lid and let the tomatoes boil for 2 to 3 minutes. • When the skin of tomatoes starts peeling off, turn off the flame and remove the tomatoes one by one. • In a bowl take cold water, add the boiled tomatoes to the water and let them cool down. • Once they’re cool, peel off the skin and cut into small pieces. • Grind the tomatoes into a coarse-paste. Do not make a fine puree. • In a pan, add olive oil, chopped garlic, finely chopped onions (small-sized). • Note – You can use any type of oil or normal cooking oil as per your wish. • Sautee the onions until soft. Add the coarse tomato paste and salt to taste. • Boil on a high flame. Lower the flame and cook for 10 minutes. • Add kashmiri chilli powder, chilli flakes, mixed herbs or oregano, black pepper powder and tomato ketchup. • Mix everything and cook on low flame for another 2 to 3 minutes. • Store in fridge in an air-tight container and use whenever you wish to.
