Ingredients
For Coating Boiled Eggs
4 Boiled Eggs
1 tbsp Butter
1 tbsp Oil
½ tsp Red Chilli powder
Pinch of Turmeric Powder
Salt to taste
A Fine Puree
1 Roughly Chopped Onion
2 Roughly Chopped Tomato
7/8 Cashew Nuts
1 Cup Water
For gravy
1 tbsp Oil
1 tbsp Butter
1 tsp Ginger-Garlic Paste
1 Green Chilli slit
1 tsp Red Chilli powder
1 tsp Coriander powder
Pinch of Turmeric Powder
½ tsp Garam Masala powder
Salt
1-2 tbsp Water
½ tbsp Fenugreek leaves
½ tsp Honey
1 tbsp Fresh Cream (optional)
Steps
For Coating Boiled Eggs
• In a pan, heat butter along with oil, add red chilli powder, turmeric powder, salt and mix it.
• Use a fork to prick each egg, this will prevent eggs from cracking.
• Add these eggs to the oil and cook on medium flame.
• Fry it golden brown from all sides and turn off the flame.
A Fine Puree
• Boil onions, tomato, cashews in 1 cup water on low flame till soft. • When cool make a fine puree of this mixture by using the same water.
For Gravy
• Heat oil and butter in a kadai, put slit chilli, ginger-garlic paste and cook on low flame for 2 mins.
• Add red chilli powder, coriander and turmeric powder, salt and pour little water and cook the spices. Add tomato-onion puree to it, mix it well and cook on low flame.
• Check the consistency of the gravy as per your choice.
• Add fenugreek leaves, garam masala powder, honey and mix.
• Then put the fried eggs with the masala to the gravy and give a mix and add fresh cream to it. Cook it for 3 to 4 mins on low flame.
• Your egg butter masala is ready. Serve it hot with parathas, roti or naan.
