This egg curry is prepared as you get in dhabas or roadside cafe or food stall. Boiled eggs are mixed with spicy curry which is eaten with rotis or bread.

Ingredients
3 Tbsp Oil
6 Boiled Eggs
2 Bay Leaves
Paste of 2 Onions
1 Tbsp Ginger Garlic Paste
Puree of 3 Tomatoes
2 Tsp Kashmiri Chilli Powder
¼ Tsp Turmeric Powder
Salt to Taste
1 Tbsp Coriander Seeds
1 Tsp Cumin
1 Tsp White Sesame Seeds
1 Tbsp Dried Coconut
2 Dried Red Chillies
1 Tbsp Dried Fenugreek Leaves
1 Tsp Garam Masala Powder
1 Cup Water

Steps
1) Using a fork, poke the hard boiled egg at different places for the masala to penetrate through the holes.
5) Then add tomato puree, red chilli powder, turmeric powder, and salt. Simmer and cook for 8 to 10 minutes.
6) For the secret ingredient: Dry roast whole coriander, cumin, sesame seeds, dry coconut and dry red chillies for a minute and grind them into a powder.
7) Add this powder to the curry along with kasuri methi, garam masala powder and mix well.
8) Pour 2 cups of water and wait till it boils. Then add the boiled eggs. Simmer, cover and cook for 4 to 5 minutes.
9) Garnish with coriander leaves. Dhaba style anda curry is ready to serve.
