Boondi ke Ladoo Recipe

7 persons 30 minutes approx

A famous Indian festive sweet made from Gram flour. Any festivals like Diwali, Holi or Weddings are incomplete without Boondi Ladoo.

Ingredients for Boondi ke Ladoo Recipe

1 & 1/2 Cup Gram Flour

1 & ¼ Cup Water

1 Cup Sugar

3/4th Cup Water

1/2 Tsp Lemon Juice

Red Food Color

Green Food Color

Yellow Food Color

Oil For Frying

2 Tbsp Dried Watermelon Seeds

Assorted Dry Fruits

1/2 Tsp Green Cardamom Powder

2-4 Drops Kewda Essence

Steps for Boondi ke Ladoo Recipe

1. Take 1 & ½ Cup Gram Flour and make a batter by adding water little by little. The batter has to be free flowing neither too thick nor watery.

2. Whisk it for 1-2 minutes in one direction, cover and keep it aside for 15 minutes.

3. For Sugar Syrup-In a pan take 1 Cup Sugar and 3/4rd cup Water keep stirring until sugar melts for 5-6 minutes on low flame. Add ½ Tsp Lemon Juice and stir it once and off the flame. The consistency of the syrup has to be thick (one thread consistency).

4. After 15 minutes remove little batter in one small bowl, add Red Food Color and mix well. Similarly, in other bowl add Green Food Color. In the main batter, add Yellow Food Color.

5. Meanwhile we have heated oil for frying. Once the oil is heated, place the ladle over the oil at a height. Pour the batter over the ladle in the oil. Even sized Boondi will fall in the oil.

6. Fry the Boondi for less than a minute. It should not get crisp and will have to remain soft. Remove using a slotted spoon and strain the Boondi excess oil on the strainer.

7. Similarly follow the procedure for Red and Green Batter.

8. Heat the Sugar Syrup and let it boil. Add Dried Watermelon Seeds, Assorted Dry Fruits and all Fried Boondi.

9. Mix everything well on low flame. Add Green Cardamom Powder and Few Drops of Kewda Essence.

10. Mix it well and off the flame. Cover the pan and keep it aside for 1 hour.

11. After 1 hour, the Boondi properly absorbs the sugar syrup. Take a handful of the boondi and start pressing it gently to make ladoos.

12. Boondi Ladoos are ready to serve or store it in an airtight container and have it later too.
