SANDWICHES are popular worldwide, But none to beat the ones from Mumbai roadside vendors. The creativity and innovative way that they are prepared by the skillful hands is mind blowing and astonishing.
Grilled cheese sandwich is a very popular snack and kids favorite as well. This recipe is Dhaba Style of making the Masala grilled cheese sandwich on a tawa/pan.
SANDWICHES ARE THE TOAST WITH THE MOST!
Breakfast is a sacred ritual in my house. Come weekend, my family looks forward to a delicious treat and this Masala toast sandwich is a winner, every single time. For me, this is a recipe that stirs up so much nostalgia. Sandwiches are wonderful, you do not need a spoon or a plate!
As a scrawny college kid who survived on unpalatable meals from the hostels kitchens, this toast used to be my treat from the small street bakery.

Ingredients for Cheese Masala Sandwich
Steps for Cheese Masala Sandwich
Cheese Masala Sandwich
Ingredients
1 tablespoon Oil
1 tablespoon Ginger-Garlic chopped
Half Onion chopped
2 Green Chilles chopped
2 medium size Potato boiled
Half cup Green Peas boiled
Salt to taste
1 teaspoon Chaat Masala
Lemon Juice
Coriander Leaves
Mayonnaise
Ghee
Bread slices for sandwich

Steps
Heat 1 tbsp oil in a wok, add 1 tbsp chopped ginger garlic sauté for 10 seconds, add half chopped onion, 2 chopped green chilli fry till onions are soft.
Then add 2 medium size boiled and mashed potato, Half cup green peas boiled, Salt to taste, 1 tsp chaat masala, few drops of Lemon juice mix it well and keep mashing it on low flame for 2-3 minutes, then sprinkle some chopped coriander leaves mix it and off the flame.
Your sandwich potato masala filling is ready.
Now start preparing the sandwiches, take 2 slices of bread. You can take brown bread or white bread.
Apply some mayonnaise on each slice. You can apply butter also if you do not prefer mayonnaise then apply some green chutney.
Then spread this potato filling on the bread slice. Making a layer then put some sliced tomatoes on it.
You can add veggies of your choice like cucumber, capsicum. After placing tomatoes, put 1 cheese slice and then cover it with another bread slice.
Prepare the remaining sandwiches in the same manner.
Heat a pan, apply some butter or ghee on it and put this sandwich in the pan to toast. After 2 minutes turn it, toast it on other side. Serve hot with tomato ketchup or chutney.

Tips *Use other veggies like grated cabbage, sweet corn, shredded beets or a mix of colorful peppers in the filling. *Top this open sandwich with some mashed avocado or chickpeas for some extra protein. *Use this on different breads ranging from Pita to Naans or even the Indian Pav. *Grate some cheese on top and bake this in a preheated oven at 180 C for 5 to 6 minutes until the cheese has melted and the bread has toasted up.
