It is said that Chicken Do Pyaza got its name from a character known as Mulla Do Pyaza in Akbar Birbal stories, some say its called so because it is made with two different forms of onions…… Chicken Do Pyaza is an Indian recipe served as Curries, Chicken is first marinated and then cooked in rich Indian spices. Chicken do pyaaza is a mouth-watering dish. It is cooked with plenty of onions that give it a nice aroma and taste. This is a very special kind of chicken dish best served with naan / tandoori roti / steamed rice.

Ingredients
1 cup cooking oil
2 tomato puree
2 tbsp coriander powder
2-3 Bay leaves
2-3 Green cardamoms
2-3 Cloves
2-3 Cinnamon sticks
4-5 Whole red chillies
Salt as per your taste
Coriander leaves (Chopped) (aka Dhanya)
2 tbsp ginger garlic paste
3-4 Green chillies (Slit in the center)
1 tsp garam masala powder
1 tsp turmeric powder
1/2 Cup yogurt
1 tbsp Cumin powder
2 tbsp Red chilli powder
4-5 Onions (finely chopped)
1 kg Chicken with bone
3 Onions (Diced)
Lemon juice (about 2 lemons squeezed)
Steps
Preparation of Marinade: In a bowl add chicken, turmeric powder, tomato puree, coriander powder, cumin powder, yogurt, red chilli powder and salt. Mix it well and leave it aside for 1 hour.
Add about ¾ cup of cooking oil, dried spices and onions (chopped) into a bowl and saute till the color of onions change to light brown.
Now add ginger-garlic paste and fry till the paste is cooked (Tip: Keep low flame so the onions do not get overcooked).
Now add the marinade chicken into the bowl. Saute for 5 minutes till all the ingredients are mixed well
Cover the bowl and leave it on a low flame for 10-15 minutes (Tip: Longer the time chicken is marinade the faster it cooks).
Add slit green chillies, garam masala powder, coriander leaves, lemon juice and water to get the consistency you want into the bowl. Cover the bowl and leave in on flame for 5 minutes
Take a pan add the remaining oil and diced onion along with red chillies and saute for 2-3 minutes.
Add the ingredients of the pan into the bowl and mix it well.
