Chicken gold coins are known as Gum Chin Gai in Cantonese. They are bite-sized bread loaded with minced chicken and sesame seeds. It serves as a simple starter. An evening snack and a massive hit in parties.

Chicken Gold Coins
Ingredients
• 150 gms boneless chicken
• 1 tsp Kashmiri chilli powder
• 1 tsp ginger garlic paste
• ½ tsp white vinegar
• Salt to taste
• 1 tsp butter
• 1 tsp butter
• 1 onion finely chopped
• 2 tsp all purpose flour
• ½ cup milk
• 1 green chilli
• Salt to taste
• ½ tsp black pepper powder
• Coriander leaves
• Some cheese
• 1 tsp corn flour (for slurry)
Steps
• For marination – Take 150 gms boneless chicken in a bowl, add Kashmiri chilli powder, ginger garlic paste, white vinegar and salt (as per taste). Mix well and leave for 30 minutes for marination.
• In a pan, add butter, allow it to melt and put chicken pieces in it to roast. Cover with lid and allow to cook for 3-4 minutes on medium flame. • After 4 minutes, flip the chicken pieces. Make sure the chicken is cooked until tender and roasted properly. • Shred the roasted chicken into fine pieces. • In a pot, add butter and allow it to melt. Add chopped onion and cook on low flame until they turn soft. • Now, add all purpose flour (maida), roast for about 3 to 4 minutes on low flame. • Add milk and keep stirring with another hand. Continue stirring on medium flame until there is thick consistency. • Add green chilli, salt, black pepper powder and stir. Next, add shredded chicken pieces and mix well. • Note – add salt in moderation since the recipe includes chicken and cheese which already has salt present in it. • Turn off the flame and let the chicken batter cool down. • Add chopped coriander and some grated cheese (optional). You can use any type of cheese as per choice. • Take a bread slice, cut the bread into round shape using a glass or anything which will give a circle shape to the bread. • Note – you can take multi-grain bread, brown bread, white bread, etc. • Tip – save the sides of bread to make bread crumbs. • On the circular bread slice, add chicken mixture in the centre. • Take another circular bread slice and dampen the sides with water lightly. Do not soak entire bread in water, just the edges. • Cover the slice with the first one and press the edges to fill gaps. Repeat same process to make more such coins. • For Grilling Chicken Gold Coins - In a grill pan, grease pan with butter. Wash some butter on the coins. Cook on low flame, keep flipping both sides. • For Frying Chicken Gold Coins – In a bowl, add corn flour and water to make slurry. • Dip the chicken gold coin in the slurry, sprinkle some sesame seeds (til) on the top. • Deep fry all the coins one by one.
