Chicken Shahi Rolls are made using minced chicken, cheese coated with bread crumbs and egg. This recipe is extremely easy to make and fried until perfection. When you pull apart the roll into two pieces, the sight of cheese oozing out will leave your mouth-watered.

Ingredients
• 500 gms boneless chicken
• 2 tsp ginger garlic paste
• 1 tsp red chilli flakes
• 1 tsp white chilli powder
• 1 tsp black pepper powder
• Salt to taste
• 1 tsp mixed herbs
• 4 to 5 pieces green chillies
• 2 tbsp butter
• Cheese slice
• Bread crumbs
• Eggs

• Take small pieces of boneless chicken in a mixer grinder jar. Add ginger garlic paste, chilli flakes, white chilli powder, black pepper powder, salt, mixed herbs (or oregano), green chillies (spicy as per taste). • Grind everything well into a fine paste. Use grinder or a chopper. • Remove in a bowl, add butter and blend well. Cover and refrigerate for about 1 hour. • Grease hands with oil, roll out the chicken mixture into a ball-like shape (lemon size). • Spread a plastic sheet or butter paper and place the chicken ball in the centre. • Cover the ball by folding plastic sheet from one side. • Press the ball lightly with palms. Flatten the ball into roti like shape. • Place a cheese slice on the centre, cut out the edges using knife. • Roll out the chicken sheet with the help of plastic. Do not fold hands. • Form a complete roll like using plastic sheet. Pack the opening mouth to prevent cheese from spilling out. • Repeat same process and make more rolls. • Dust the roll in bread crumbs, dip in beaten egg. Egg is beaten with some salt. • Deep fry all the rolls one by one. Serve with ketchup or mint chutney.
