Chicken Tikka Crepes
Ingredients
• 1 cup all purpose flour
• 2 tbsp butter
• 1 egg
• 1/2 cup water
• 1/2 cup milk
salt to taste
• 150 gm chicken boneless
• 1/2 tsp garam masala powder
• 1 tsp red chilli powder
• 1 tsp lemon juice
• 1 tsp ginger garlic paste
• 1 tbsp curd
• 1-2 tbsp oil
• 1 onion
• 3 tbsp capsicum
• 1/2 tsp black pepper powder
• 1 green chilli -chopped
• 1/2 cup mozzarella cheese
• 1 tbsp all-purpose flour for slurry
• 2 tbsp water for slurry
• 1 tbsp oil
Steps
1. First, we will make the batter of the crepes. In a blending jar, add in all-purpose flour, melted butter, one egg, water, milk and salt to taste. Blend these ingredients well.
2. If the consistency of the batter is too thick, you may add a little water or milk. Cover and let it rest for half an hour.
3. For the chicken tikka, cut the boneless chicken into small cubes. Into it, add some salt, garam masala powder, red chilli powder, lemon juice, ginger garlic paste and curd. Mix well and set aside to rest for 10 mins.
5. Lower the flame and cover and simmer until the chicken turns tender.
6. Next, toss in chopped capsicum and onions. Also add in salt, black pepper powder and finely chopped green chilli. Stir and mix on low flame. Cover and cook on low flame for 1-2 mins until the onions and capsicum are tender. Set the mixture aside to cool.
7. Put a pan on the flame and spray some oil in it. Pour in a ladleful of crepe batter and spread it around on the pan. Cook on low flame on both the sides for around a minute each.
8. In the cooled chicken mixture, add in mozzarella cheese.
9. Make a slurry out of all-purpose flour and water
10. To fill the crepe, place the chicken mixture (around 2 tbsp) in its centre. Fold from all sides sealing it with the slurry as you go.
11. To roast the crepes, heat some oil in a pan. Add in the crepes, cover and grill the crepes on low flame for 3-4 mins. Flip and cook until golden on all sides.
