Ingredients
For Marination
150 gms Chicken
1 Tsp Smith & Jones Ginger Garlic Paste
Salt
1 Tsp Red Chilli Powder
1 Tsp Lemon Juice
1/4th Tsp Garam Masala Powder
For Dough
All purpose flour- 1 cup/125 gms
Salt- 1/2 tsp
Oil- 1 tbsp
Ajwain/Carom seeds-1/4 tsp slightly crushed
1/2 cup water warm
2 Tsp Oil
1 Boiled & Mashed Potato
Coriander Leaves
Salt
Spring Onion
1 Green Chilly
1/2 Tsp Chilli Flakes
3 Tbsp All Purpose Flour + 8 Tbsp Water
Steps
1. Marinate the Chicken Kheema with Ginger Garlic paste, Red Chilli powder, Lemon Juice, Garam Masala powder and Salt. Keep it aside.
2. For dough- Mix All purpose flour, Salt, Oil and Ajwain. Gradually add the warm water and knead till a stiff dough is made. The dough should be firm.
3. Cover the dough with a muslin cloth and leave it aside for 30 mins.
4. Take a pan and add 2 tbsp oil, allow to heat up and add the marinated chicken. Continuously stir the chicken and mash it slightly.
5. Once cooked, add one big boiled and mashed potato, coriander leaves, spring onion greens, green chilli, salt to taste, chaat masala and red chilli flakes.
6. Mix it well and dry it out completely. Mash it with the spoon and off the flame.
7. Knead the dough again, and dust plain flour and roll out the dough in a round thin circle.Cut the edges and give it a square shape.
8. Spread the cooked chicken mixture on the shaped dough completely.
9. Roll the dough from one end to another and seal it with water. Apply slight pressure and roll well.Cut into 1 inch circles and flatten lightly on your palms.
10. Make a thick slurry of 3 tbsp all purpose flour and 8 tbsp water. Dip the pinwheels in them one by one.
11. Heat oil to a medium flame and fry allowing the Chicken Pinwheels to cook and crisp.
12. Tasty and Crispy Chicken Pinwheel are ready to serve.
