Ingredients
2 Tbsp Oil
1 Onion
1 Tomato
Salt
3 Green Chillies
2 Tbsp Oil
1 Tbsp Ghee
2 Dried Red Chillies
1 Bay Leaf
1 Cinnamon
2 Green Cardamom
1 Black Cardamom
2 Cloves
250 gms Boneless Chicken
1 Tbsp Ginger Garlic Paste
Salt
1&1/2 Tsp Coriander Powder
1/4th Tsp Turmeric Powder
1 Tsp Red Chilli Powder
1/2 Cup Water
1 Tbsp Curd
2 Tbsp Fresh Cream
1/2 Tsp Dried Fenugreek Leaves
Few Coriander Leaves
Steps
1. Heat 2 Tbsp oil in a pan, add sliced Onion and sauté it for a while.
2. Add sliced Tomato, Salt and chopped Green Chillies. Mix everything well. Cover the pan and let it cook for 5 to 6 minutes.
3. In a wok, heat 2Tbsp Oil and 1 Tbsp Ghee. Add Dried Red Chillies, Bay Leaf, Cinnamon, Green Cardamom and Black Cardamom and fry for a minute.
4. Add 250gms Chicken cubes, Ginger Garlic Paste and Salt. Mix everything and fry until chicken turns slightly brown.
5. Add Coriander Powder, Turmeric Powder and Red Chilli Powder. Mix and roast all the spices properly on low flame.
6. Tomatoes in the other pan is properly cooked so off the flame. Let it cool and make a fine paste in the mixer grinder.
7. Add the Tomato Paste/Puree in the Chicken, 1/2 cup of water, Curd, Fresh Cream and Fried Fenugreek Leaves (Please keep the flame low while mixing so that the curd does not curdle).
8. Cook the gravy for 1 minute on low flame. Increase the flame and let it boil. Later cover the pan and cook for 5 to 6 minutes on low flame.
9. Off the flame, once the oil is separated from the gravy and the consistency is thick.
10. Garnish Creamy Boneless Chicken Handi with few Coriander Leaves.
