Creme Caramel Custard
Ingredients
• 4 tbsp sugar
• 2 tbsp water
• less than ½ cup sugar
• ½ litre milk
• 3 eggs
• 1/2 tsp vanilla essence
• 1 litre water
Steps
1. To begin, take the cake tin in which you will prepare the caramel custard.
2. Into it, add 4 tbsp sugar and 2 tbsp water. Put it on medium flame and stir lightly until sugar melts.
3. When the sugar melts, stop stirring and let the mixture cook on low flame. Do not stir with a spoon. Hold the cake tin with the help of a tong and mix around sometimes in between. Continue cooking until the sugar caramelizes and turns golden. Put it aside to let the caramel cool and set.
4. On a stove, heat ½ litre milk. When the milk boils, lower the flame and simmer for around 10 mins, stirring continuously.
5. Into it add less than half a cup of sugar and stir on low flame until sugar dissolves. Take off the flame
6. In a bowl, crack 3 eggs and add vanilla essence into it. Whisk them lightly.
7. In a separate pot, heat around 1 litre of water. Let it come to a boil. (this step is akin to preheating the oven)
8. Pour the milk and sugar mixture in a beaker. (the milk should be lukewarm).
9. Keep whisking the eggs and pour the milk mixture into it. make sure not to overbeat the eggs.
10. Strain the egg and milk mixture.
11. Take the cake tin with the now set caramel and grease its sides with some butter.
12. Pour in the egg and milk mix and put the cake tin into the boiling water on a stand. Cover and cook on high flame for 2 mins.
13. Then, lower the flame and cook for 20-25 mins.
14. Take out the cake tin and let the custard cool down to set. When it cools down, put it in the refrigerator for an hour.
15. To take it out of the cake it, first scrape it sides with a knife to loosen the edges.
