It has been a long time since we had a get together or a picnic with family and friends. We can cherish our memories reminiscing through the old photos. It makes me so Nostalgic. We have school holidays during summer and we would often head out for a picnic with a group of friends and family.

This week I am sharing a delicious finger food that is perfect for choti si bhukh in the evening or even as a party starter. It is so tempting that it was gobbled in a jiffy. Rava Bites / Semolina bites can be prepared within 25 minutes. It is very easy and quick recipe. My kids just loved it.
Semolina is the coarse, purified wheat middlings of durum wheat mainly used in making upma, pasta,and couscous. This is populary used in many parts of the world to bake and cook savoury and sweet delicacies.There are many varieties of delicious dishes can be made from this humble ingredient.
Semolina Crispies is made from sooji (semolina), flour, ghee, and spices, and is typically fried until crispy. The snack is often served as an appetizer or a tea-time snack and can be enjoyed with a cup of chai or coffee.

These Cheesy Semolina bites are ready within 30 mins and so easy to make with easily available ingredients at home.
My kids love these cheesy bites. You can deep fry these bites or even make a low oil baked version in Appe pan or Air Fryer.

Semolina or Cream of Wheat, is known in India as Sooji(known in North India) or is granulated form of wheat, coarse or fine. In Southern India it is known as Rava. It is widely used in Indian Cuisine for making snacks, breakfast items and desserts. One of the most commonly available and used ingredient, it is quite budget friendly also. You can also add grated carrots, finely chopped capsicum and onions. Also fresh cilantro gives a nice aroma and flavour to it.

Ingredients
1 tablespoon Oil
1 teaspoon Garlic
Half teaspoon Ginger
1 Green Chilli
1 medium size Onion
1 big size Carrot
Half cup Cabbage
1 Capsicum medium size
1 tablespoon Soya Sauce
2 teaspoon Vinegar
1 teaspoon Chilli Sauce
Half teaspoon White Pepper Powder
Green part of Spring Onion
Half teaspoon Salt
1 cup Water
Half cup Semolina
Tamarind Pulp
Half teaspoon Green Chilli Sauce
Half teaspoon Sugar
1 teaspoon Red Chilli Powder
4-5 Cloves of Garlic
1 tablespoon Tomato Ketchup
1/4th teaspoon Salt
2 Potatoes
100 gms Paneer
Half teaspoon Salt
4 tablespoons of Refined Flour
Breadcrumbs
Steps
Heat 1 tbsp oil in a big wok, add 1 tsp chopped garlic, half tsp chopped ginger, 1 chopped green chilli.
Stir these 3 ingredients for half a minute on medium to low flame then add 1 medium size chopped onion cook it for half a minute.
Then add 1 big size grated carrot, half cup grated cabbage, stir fry it on medium to high flame for a minute, then add 1 medium size chopped capsicum, 1 tbsp soya sauce, 2 tsp vinegar, 1 tsp chilli sauce, half tsp white pepper powder, greens of spring onion, half tsp salt.
Then stir fry on medium to high flame for a minute, so that all the veggies become a little crunchier and the water released by the veggies is dried up.
After 2 minutes add 1 cup water mix it well and let it come to a boil.
When the mixture starts boiling, add half cup semolina keep the flame low keep mixing it so that the semolina puffs up and the mixture turns into a soft like dough.
Then off the flame transfer this dough into separate bowl and allow it to cool.
To make the chutney take 1/3rd cup of tamarind, soak in water for 15 minutes then squeeze it and remove the pulp.
Now take this pulp into a bowl add half tsp green chilli sauce, half tsp sugar, 1 tsp red chilli powder, 4-5 cloves of grated garlic, 1 tbsp tomato ketchup, 1/4th tsp salt and mix it well and keep aside.
Check the semolina mixture when cool down add 2 boiled and mashed potatoes, 100 gms grated paneer, half tsp salt, mix all of these well with your hands to get a semi soft dough.
If the dough is very sticky add some cornflour or riceflour and mix it.
Grease your hands with oil and start making the bites.
The shape and size of the crispy bites depends on you how you want it to make.
You can give it a round, square or triangle shape as you like.
Prepare the bites and keep them for some time in the freezer to set a little that will make it easy to handle them while frying.
Take some refined flour in a bowl; add water gradually to make semi thick slurry to dip the bites to fry.
Take some breadcrumbs in a tray.
Take the bites out from the freezer, dip them in slurry, and coat them with bread crumbs.
You can store them at this point in the freezer for weeks.
Then deep fry them on medium to high flame till golden brown.
Serve them hot with tamarind chutney or ketchup.

Tips *Fry the bites patiently while deep frying because it takes time to turn golden brown. *Do not over crowd while deep frying to allow them cook evenly. *Make sure that dough is not soft otherwise bites will not turn crispy.
