Daal Gosht - is one of the very popular Mutton Recipes in Pakistan and India. It is basically a mutton simmered with spices a mixture of toor dal, chana dal and masoor dal or just any either of them. This is a very frequent menu from any kitchen. And not just anybody, but all muslim families are huge – huge fans of this irresistible mutton delicacy.
Serve it with a variety of breads like tandoori roti, butter naan and butter kulcha. It goes the best with rice. Jeera rice and baghare chawal is the most popular and loved side to go with it. Other than that bagharey chawal and regular steamed rice are perfect to go with this dal gosht recipe. Delhi Darbar Style Dal Ghosh
Ingredients
1/3rd cup Chana Dal
1/3rd cup Toor Dal
1/4th cup Masoor dal
3 cups of Water
Salt
1/2 teaspoon of Turmeric powder
1 teaspoon of Ginger-Garlic paste
Few drops of Oil
6 tablespoons of Oil
2 Bay leaves
1 Star Anise
4-5 Cloves
2 Cinnamon
1 Onion
1 & 1/2 teaspoons of Ginger-Garlic paste
Salt
600 grams of Mutton
1 Tomato
1 tablespoon Green Chilli paste
1/4th teaspoon of Turmeric powder
500 grams Bottle Gourd (dudi)
1 teaspoon Coriander seeds
1/2 teaspoon of Fennel seeds
1/2 teaspoon Cumin seeds
10-12 Black Peppercorns
3 Cardamoms
2 teaspoons of Coriander powder
1 teaspoon of Red Chilli powder
1 teaspoon of Cumin powder
Coriander and Mint leaves
1/2 teaspoon Garam Masala powder
1 cup Water
2 tablespoons of Tamarind soaked in half a cup of water
1 teaspoon Ghee
1 Clove of Garlic
2 Pinches of Red Chilli powder
Steps
Wash and soak in water 1/3rd cup of toor dal, 1/3rd cup of chana dal, 1/4 cup of masoor dal for 1 hour.
In a pressure cooker add these washed and soaked dal, 3 cups of water, 1/2 tsp turmeric powder, salt, 1 tsp ginger-garlic paste, few drops of oil and mix it.
Next pressure cook this dal on high flame till one whistle and then cook it on low flame for 7-8 minutes till done.
By the time the Dal is being cooked let us prepare the mutton.
In a pressure cooker heat 6 tbsp of oil, add 2 bay leaves, 1 Star Anise, 4-5 cloves, 2 piece cinnamon, 1 big size onion sliced.
Fry the onion till brown, then add 1 & 1/2 tbsp ginger-garlic paste, roast it for about 1 minute with the onion and after that add 600 grams of mutton.
Fry the mutton on high flame for 5-6 minutes keep stirring, after frying the mutton for 5 minutes add 1 round sliced tomato, 1 tbsp green chilli paste, 1/4th tsp turmeric powder and fry it with the mutton for 3-4 minutes on high flame and then add 1/3 rd cup of water mix it and then put the pressure cooker lid. Pressure cook it on high flame till one whistle, cook for 10-15 minutes on low flame till the mutton is 90% done.
Now check the dal, if done whisk it with the help of a whisker and keep it aside .
Now in a Kadai take 750 ml of water add 1 tsp salt, 1/2 tsp turmeric powder, mix it and allow it to boil.
When it comes to a boil add 500 gms of bottle gourd peeled and cut into pieces, remove the inner seeds. Cook it in this water till it is 80% done as the bottle gourd will also be cooked with the mutton and dal so cook it till 80% soft.
By the time prepare the secret masala of this dal ghosh.
Heat a small pan and add 1 tsp coriander seeds , 1/2 tsp fennel seeds, 1/2 tsp cumin seeds, 10-12 black peppercorns, 3 green cardamom, dry roast these spices for 2-3 minutes on low flame little brown in colour then cool it down and crushed into a course powder.
Now check the bottle gourd if done remove it from the water and keep aside .
Then check the mutton if done, now cook it on a high flame keep stirring, add 2 tsp coriander powder, 1 tsp red chilli powder, 1 tsp cumin powder, now fry it on a high flame with this spices till the mutton becomes a little dry and all the water in the Mutton is dried up and oil separates.
When it is done add chopped mint and coriander leaves mix it and then add the cooked bottle gourd pieces to the mutton, give a mix and after that add the cook dal to this mutton.
Next add the coarse spice powder to the Dal Ghosh, give a good mix and check the consistency, add 1 cup of water and let it boil on high flame, then cook on low flame for at least 12-15 minutes .
And now take the tamarind that is soaked in water, squeeze the tamarind juice out of it with the water.
Instead of tamarind juice you can add 1 tbsp of lemon juice.
Now check the dal ghosh if the mutton and bottle gourd is done add this tamarind juice to the Dal ghosh, mix it, cover it and cook for 5-7 minutes on low flame.
Next to prepare the Tadka of the dal ghosh .
Heat 1 tbsp ghee in a small pan, add 1 clove of Garlic cut into pieces and fry till brown, add 1 tsp Kashmiri red chilli powder and off the flame, give a good mix and now pour this tadka on the simmering Dal Ghosh and off the flame.
Your daily Darbar style dal ghosh is ready.
Serve it hot with rice, naan or paratha.

Tips *Make sure that bottle gourd should be cooked completely but with due respect retaining its proper shape till the end. *If you do not want to add lemon juice, you can skip it, but serve with lemon wedges for best results, but if you have added them, there is no point serving with lemon wedges. *Increase or decrease the number of red chilly powder and green chilies as per your preferences.
