Dal is a staple dish in most Indian households. While there are plenty of things that we cook on a daily basis - nothing defines comfort best than a humble bowl of dal. Do you agree? It is flavourful, versatile and packed with several nutrients. However, what really helps in enhancing its flavour is the tadka. So, if you want to add an extra layer of flavour to your dal.
A classic chana dal recipe made with split and hulled bengal gram and a double tempering. The crackling tadka makes this dal taste absolutely delicious. Pair it with chapati or paratha and you are good to go!

Dhaba Style Dal Fry is a delicious and flavorful lentil curry served at Punjabi Dhaba in India. The lentils are slow-cooked until they are creamy and mushy, topped with aromatic spices.
Chana Dal Fry is very easy and quick to make. We do not need much preparation for this. Only an hour for soaking the chana dal is enough. Sometimes after having a busy day, this recipe comes together easily. Just make rice or Paratha with it, and a complete meal is ready.
Chana Dal Recipe is a lentil-based spicy soup that is served as a side dish in a meal. This simple, fast, comforting, scrumptious, and delicious Chana Dal – Split Chickpeas Soup is cooked with ginger, garlic, onion, tomato and enhanced with cumin garlic Tadka (tempering), which makes it into a smooth soup.

Ingredients
100 gms Bengal gram
2 tablespoon Curd
1 Green Chilli chopped
1/4th teaspoon Garam Masala powder
1/4th teaspoon Dried Fenugreek Leaves
2-3 tablespoon Oil
1 teaspoon of Cumin
1 Onion
1 teaspoon Ginger-Garlic paste
1 teaspoon of Chilli powder
2 teaspoons of Coriander powder
1/2 teaspoon Salt
1/4th teaspoon Turmeric powder
1 Tomato chopped
Fresh Coriander
2 tablespoon Ghee
1 tablespoon chopped Garlic
1/2 teaspoon Chilli powder
Steps
Wash and soak 100 gms of chana dal in water for 5-6 hours, if you do not have time then soak it in hot water for at least 1 hour .
Boil 3 cups of water in a pot and add 1/2 salt, drain the water from the soaked dal, then add this chana dal to the boiling water till soft.
Take 2 tbsp curd in a bowl, add 1 chopped green chilli ,1/4th tsp garam masala powder, 1/4th tsp dried fenugreek leaves (roasted and powder), mix it well and keep aside.
Check the chana dal if not done cook it for some more time, the dal should not break it should be soft as we are going to cook whole Chana dal.
Check it with your fingers, press it if its soft and breaks easily with your fingers then its done.
Next step is heat 2-3 tbsp of oil in a large pan add 1 tsp cumin seeds, after 10 seconds add 1 big chopped onion, cook till golden brown, then add 1 tsp ginger-garlic paste and roast it after 2 minutes on low flame, add 1 tsp red chilli powder, 2 tsp coriander powder, 1/2 tsp salt, 1/4th tsp turmeric powder keep the flame low and roast it and keep stirring.
Add a little water and cook it for 2 minutes.
After cooking it for 3-4 minutes add 1 chopped tomato, mix it and cook it on high flame till it boils and then reduce the flame and cook for 3-4 minutes.
Check the tomatoes if done off the flame, then add the curd mixture that was prepared before to this tomato mixture, mix it add some coriander leaves.
Now on the flame cook it on a high flame, cook it for 4-5 minutes keep stirring till all the masalas and curds are mixed together.
Next add the boiled chana dal with the water in which it was boiled to this.
Mix it and let it boil on high flame for 3-4 minutes, after that cover the pan with a lid and let it cook for 5-6 minutes on low flame.
After that check the chana dal and the consistency if it is as you require then off the flame.
Now prepare the tadka.
Heat 2 tbsp ghee in a pan then add 1 tsp chopped garlic to it, cook it till the garlic becomes a little brown after that off the flame.
Then after half a minute add 1/2 tsp red chilli powder to the ghee and mix it well with it.
Pour this tadka on the cooked Chana Dal.
Your Dhaba style chana dal is ready to serve.
Serve it hot with paratha, tandoori roti, pickle, rice and papad.

Tips * Increase or decrease the spices according to your preference. *Soak the chana dal for at least an hour for the best results and quick cooking. However, if you do not have enough time, wash the dal thoroughly and soak it in hot water for 30 minutes. * You can use a pressure cooker to boil the lentils. But instead of a pressure cooker, you can boil them in a large pot or pan with sufficient water.. *Keep the Chana Dal Fry thick to serve it with flatbread. But if serving with rice, keep it on the thinner side by adding a little more water. *The main ingredient of making dal Tadka is Asafoetida, as it solves the stomach-related guide, and enhances the flavor of Dal. *Use ghee for making Dal as it will enhance the taste and flavor.
