Ingredients
1 litre Milk
1 kg Carrot
150 gms of Sugar
4 to 5 tablespoon Clarified Butter Ghee
1 teaspoon Cardamom Powder

Steps
Take a heavy bottom non-stick wide pan, apply a little ghee with the help of a brush to the sides and bottom of the pan. We are going to boil the milk in this pan.
Heat the pan add 1 litre milk by keeping half cup of milk aside from it, let the milk come to a boil on low flame. Keep stirring in between 2-3 minutes as cream should not be formed. You have to keep boiling the milk on low flame till it reduces to 50%.
By the time the milk is boiling, wash 1 kg of carrots, peel them and chop into small pieces. Here we are not grating the carrots as they take a lot of time and hard work this is an easy way to make this halwa.
Heat 2-3 tbsp of ghee in a pressure cooker add the chopped pieces of carrots, fry the carrots in ghee on high flame for 5 minutes keep stirring. After 5 minutes add half cup of milk that you have kept aside to the carrots and half tsp cardamom powder, keep half tsp cardamom powder for later use.
Mix all the ingredients well, and then pressure cook it for 3-4 whistles on low flame.
Keep checking and stirring the boiling milk till it reduces to half the quantity.
After 3-4 whistles are done off the flame, let it rest for 10 minutes, then open the lid of the pressure cooker and check the carrots. When soft mash it with a masher to make a smooth mixture of cooked carrots.
When the milk is boiled to half, add these mashed carrots to the milk and mix it well. Cook it on low flame, add 150 gms of sugar mix it well till the sugar melts, add 2 tbsp of ghee and let it cook on low flame till all the milk in the halwa dries up.
Then add some chopped dryfuits, half tsp cardamom powder, mix it well.
If you feel the halwa is little dry add some more ghee and mix it till the ghee us absorbed then off the flame.
Serve it hot or cold as you like.

Tips to make Gajar ka Halwa *Make sure to not leave any lumps while you grate the carrots. The finer the better it is. *Make sure that you keep the flame low at all times. This is a dessert that is best cooked at its own pace. *Keep it only as long as the milk dries up.
