KOKAM SHARBAT RECIPE
Ingredients
200 grams Kokam
3 cups Sugar
1-inch Ginger piece
2 tablespoon Black Salt
1 teaspoon Salt
2 teaspoon Roasted Cumin powder
1/4th teaspoon Pepper powder
1 tablespoon Lemon Juice
Steps
Take 200 grams Dried kokum soak it in hot water for 3-4 hours.
After 3 hours you will see that the kokum has given a nice colour to the water.
Put this kokum with the water also in the Blender and blend into a smooth paste.
Heat a kadai add 3 cups of sugar in it and add 2 cups of water.
Stir it till the sugar melts cook for 4-5 minutes after that add the kokum paste that you have made to this sugar and mix it.
Keep stirring cook on low to medium flame for 3-4 minutes. After cooking it for 3-4 minutes add small pieces of Ginger, 2 tsp black salt, 1 tsp regular salt, 1/4th tsp black pepper powder, 2 tsp roasted cumin powder. Keep stirring and cook it for 8-10 minutes till the mixture turns a little thick and sticky.
After cooking it for 10 minutes check if it turns sticky off the flame.
After you have off the flame add 1 tbsp lemon juice to it and mix it.
By adding lemon juice, the sugar will not crystallize and you can store it further for 2-3 months.
After this strain the mixture with a strainer in a bowl and discard the strained pulp.
Make sure that the bowl in which you are straining the mixture should be pat dry, no water or moisture should be present in the bowl in which you are straining it.
Fill this kokam syrup in a dry bottle and you can store it in the refrigerator.
Now lets make kokum Sharbat, for making 2 glasses of kokum sharbat take 4 tbsp of kokum syrup from the bottle add ice cubes, water and mix it and its ready to drink.
Serve the Kokum Sharbat chilled with ice cubes for a truly refreshing experience. You can also add a slice of lemon or a sprig of mint for added visual appeal.
