Khichdi is a popular Indian one-pot meal. It is a wholesome, vegetarian meal of lentils and rice. There are many types of khichdi recipes followed across India. In certain regions, it has a porridge-like consistency; in others, it is more like a pulao.

Lehsuni Masala Khichdi
Ingredients
1/2 cup Rice
1/3 cup Moong Dal
2 tablespoons of Oil
1 Bay Leaf
1 teaspoon of Cumin
1 small Onion sliced
1/2 teaspoon Ginger-Garlic paste
1 Tomato sliced
1 Green Chilli chopped
Salt to taste
1/2 teaspoon Red Chilli powder
1/4th teaspoon of Turmeric powder
1/4th cup Green Peas
3 cups of Water
1 tablespoon Pure Ghee
1 tablespoon chopped Garlic
3-4 Dry Chillies
Steps
Wash and soak in water 1/2 cup rice and 1/3 cup moong dal for 1 hour.
After 1 hour rinse the water, if you are short on time soak both of these in hot water for 15 minutes.
Heat 2 tbsp oil in a pressure cooker add 1 bay leaf, 1 tsp cumin, 1 small onion sliced fry the onions until soft.
When the onions are soft add 1/2 tsp ginger-garlic paste, on low flame fry the ginger-garlic paste for about a minute, add 1 small sliced tomato, 1 chopped green chilli, salt, 1/2 tsp red chilli powder, 1/4th tsp turmeric powder, 1/2 cup green peas, we have used frozen peas, you can use fresh peas.
You can also add more vegetables of your choice, be sure that the tomatoes and spices are cooked well on high flame for 2-3 minutes till oil separated.
Then add 3 cups of water if you prefer a mushy porridge, then add some more water and if you prefer less Mushy then add less water. Adjust the quantity of water accordingly.
Then add the soaked rice and lentils to it, give a mix, close the lid and cook on high flame until one whistle, then adjust on low flame and cook for 8-10 minutes.
Check the Khichdi, if there is any water left allow the Khichdi to dry on low flame .
Garnish with coriander leaves and remove the Khichdi in a serving bowl.
Next we have to prepare for the Tadka of The Khichdi.
Heat 1tbsp pure ghee in a small kadai, then add 1 tbsp chopped garlic, fry garlic until golden in colour, then add 3-4 dry chillies and switch off the flame.
Pour this tadka on the Lehsuni Masala khichdi. Serve hot with curds, pickle, papad or chutney.

Tips *A khichdi tastes best when cooked in ghee (clarified butter). Substitute it with unsalted butter or vegetable oil. Or you can use refined vegetable oil for cooking and ghee for tadka (tempering). *The consistency of a khichdi can be like pulao or like porridge. Hence, adjust the amount of water accordingly. *It is a pressure cooker-friendly dish. You can use an instant pot, multi-pot, electric pressure cooker, or a traditional stovetop for cooking this khichdi. *The tadka of masala khichdi is medium spicy. Reduce the number of chillies according to your taste preference. *You can reduce the red chili powder if you cannot handle heat. *If you like the khichdi mushy add 1/2 cup more water, and if you like it slightly firm reduce 1/2 cup water.
