Paneer Matar Pulao , is an easy Pulao recipe which is a favorite among vegetarians . It is a combination of rice combined and paneer along with some spices, and the addition of ghee, makes it a finger licking good pulao.

Ingredients
250 gms Basmati Rice
1 Tbsp Oil
250 gms Paneer
2 Tbsp Oil
2 Cinnamon Sticks
4 Cloves
2 Green Cardamoms
2 Bay Leaves
1 Tsp Cumin
1 Sliced Onion
1 Tbsp Ginger Garlic Paste
½ Cup Green Peas
Salt to Taste
2 Green Chillies
1 Tsp Garam Masala Powder
¼ Cup Curd
Some Coriander
Some Salt
1 Tsp Oil
Some Cashews
Steps
Wash the rice and soak for at least 20 minutes.
Heat a pan, add one tablespoon oil and sauté the Paneer till they turn golden brown and keep aside. (Note: Do not over fry as the Paneer will become dense)
In the same pan fry, bay leaves, cinnamon, cloves, cumin and green cardamoms in 2 table spoon oil.
Saute on low flame till they turn aromatic
Add thinly sliced onions, sauté till they turn light golden, add ginger garlic paste, green peas, salt and saute well.
Add half litre water, green chili slits, garam masala powder, yoghurt and coriander leaves.
When it comes to a boil add the rice and salt, gently mix everything. Simmer and cook till the rice is 90 % done. Finally add the Paneer and simmer till done. (Note : Preserve some paneer pieces for garnishing. Garnish Paneer Pulav with fried Cashew nuts, Paneer and Coriander leaves. It is ready to serve.
