Special Mutton Pulao is an improvised version of pulao recipe where aromatic spices are used along with tender mutton.

Special Mutton White Pulao
Ingredients
• 1/2 cup Oil
• 2 Bay Leaves
• 1 Black Cardamom
• 2 Small sticks of Cinnamon
• 3 Cloves
• 1 Star Anise / Badiyan
• 10 Black Pepper Corns
• 1 tsp Cumin
• 1/2 tsp Shah Jeera/ black cumin
• 2 Small Onions Chopped
• Salt to Taste
• 3 tbsp Ginger Garlic Paste
• Half Glass of Water
• 400 gms Mutton
• A ground mix of the following- 2 bay leaves- 3 green cardamom- 1 black cardamom- 2 cloves-1 pc cinnamon- 1 star anise- little mace-1/4th nutmeg and 1 tbsp coriander seeds
• A paste of Some Coriander Leaves and 6 Green Chillies
• 1 cup curd whisked/ beaten
• 1 Small Tomato Chopped
• One Potato (optional)
• some Peas (Optional)
• 1 & ½ Cup Rice (soaked for one hour)
Steps
1. With the flame still off, take oil in a pressure cooker. Into it, add 2 bay leaves,1 black cardamom,2 small cinnamon sticks,3 cloves, 1 star anise, black pepper corn, cumin, black cumin, sliced onions, salt and ginger garlic paste. Mix and combine well.
2. Pour in half a glass of water. Turn on the flame and cover and cook on high flame till one whistle. After that lower the flame and cook for 7-8 minutes till onions are cooked.
3. Add the mutton pieces and cover and cook till the mutton is 90% done.
4. In a separate bowl, take 2 bay leaves, 3 green cardamom, 1 black cardamom, 2 cloves, 1 pc cinnamon, 1 star anise, little mace,1/4th nutmeg and 1 tbsp coriander seeds. Grind them together into a fine powder. (this is the same step mentioned in the ingredient list)
5. As mentioned in the ingredients, make a paste of Some Coriander Leaves and 6 Green Chillies. We can also utilize the stems of the coriander leaves for a nice flavour.
6. When the mutton is cooked, transfer it into a pot and cook on high flame for some time.
7. Add in the whisked curd, paste of coriander and green chillies, ground masala powder, chopped tomatoes, potatoes and peas. (you may skip the potatoes and peas if you like). Mix and stir them together on high flame for 2-3 mins
8. Lower the flame and cover and simmer for 5-10 minutes.
9. Pour in around one glass of water and bring the mixture to a boil.
10. Add in the soaked rice and salt. Mix well on high flame for 4-5 minutes.
11. Lower the flame and cover and cook for 8-10 minutes
12. Turn off the flame and spread some ghee over it if desire. Serve.
