Ingredients
• 3 Tbsp Coconut
• 2 Tomatoes
• 4-5 Green Chillies
• 1 Tsp Cumin
• Coriander Leaves
• 1 Tsp Chilli Powder
• 1/2 Tsp Turmeric Powder
• 1 Tbsp Coriander Powder
• 250 gm Basmati Rice (soaked)
• 4 Tbsp Oil
• 2 Indian Bay Leaves
• 1 Cinnamon
• 1 green Cardamom
• 3 Cloves
• 1-2 Tbsp Onion (chopped)
• 1 Tbsp Ginger Garlic Paste
• 1 Cup Prawns
• Salt to Taste
• 500 ml Water
• 1/2 Tsp Garam Masala Powder
• 3-4 Green Chillies
• Coriander Leaves
Steps
1. In a large bowl, add in coconut, chopped tomatoes, 4-5 green chillies, cumin and some coriander leaves. Grind these to make a fine paste.
2. Into the paste, add in chilli powder, turmeric powder and coriander powder. Stir well and mix.
3. In a pan, heat oil. Add in bay leaves, cinnamon, green cardamom and cloves. Let them fry for half a minute.
4. Toss in chopped onions and stir fry on high flame until the onions turn golden.
5. Add in ginger garlic paste and cook well on low flame for 1-2 mins.
6. Take the prepared masala and add it into the pan with onions. Stir well and mix on high flame
7. Lower the flame and simmer for 4-5 minute. Keep checking in between.
8. Toss in a cup of washed prawns and salt. Combine well on low flame.
9. Cook on medium flame for 1-2 mins. (never overcook the prawns. It toughens up)
10. Pour in 500 ml water and with flame on high, let the mixture boil.
11. Add in the soaked rice, salt, garam masala powder. Stir lightly.
12. Let the mixture boil on high flame for 1-2 mins
13. Lower the flame and add 3-4 slit green chillies. Cover and simmer for 5-7 mins on low flame.
14. Mix and add some coriander leaves.
15. Check if the rice is done. If not, cover and cook on low flame for another 2-3 minutes. Serve.
