Ingredients

3 cups milk
½ cup sugar
¼ cup milk powder
3 White bread slices (grind and make crumbs)
Saffron

Half tsp Kevda water
• Malpua Batter
3 ½ cups Milk
2 cups Sugar
Cardamom powder
Yellow food colour
¼ cup Semolina
½ cup milk powder
Chopped Almonds
2 cups All-purpose flour
• 2 eggs
• Ghee
• Dry fruits for garnishing
Steps
1. Start by putting the milk on the stove in a large pot.
2. Into it, add sugar and mix well until the sugar dissolves. Also add in cardamom powder and yellow food colouring. Bring the milk to a boil. Set aside to cool. (this will be used to make the malpua)
3. For the rabdi, heat 3 cups of milk. Add in ½ cup sugar and mix well.
4. In a separate small bowl, add some milk into the milk powder and stir well.
5. Pour the milk powder mixture into the milk and sugar foe rabdi. Keep stirring as you mix.
6. Cut the edges of the bread and grind them into crumbs. Add the breadcrumbs too into the milk and let it cook on low flame.
7. Next, add saffron, chopped almonds and kewda water. Stir to mix well. Let it cook until the mixture turns thick. Turn off the heat and set the rabdi aside.
8. Into the now cool milk of malpua, add semolina, milk powder and chopped almonds.
9. Sift the all-purpose flour and add it gradually into the milk. Keep stirring as you add to avoid lumps. Blend it with a blender to ensure a smooth batter. Cover and set aside for an hour.
10. For the final step to make the malpua, in a bowl, crack two eggs. Add in ¾ cup of the malpua batter and beat well. (if the batter seems too thick, add in some milk )
11. Heat ghee in a frying pan. Pour in the egg and malpua mixture and fry on medium flame. Cook until golden on both sides
12. To assemble, put the fried malpua onto the serving plate. Spread the prepared rabdi over it.
