Ingredients for Malai Kulfi

â€¢ 1 litre milk (full cream)

â€¢ saffron

â€¢ 12 almonds (chopped/sliced into small pieces)

â€¢ 12 pistachios (chopped/sliced into small pieces)

â€¢ 4 tbsp sugar

â€¢ 1 tsp kewda water

â€¢ 2 tbsp milk powder

Steps for Malai Kulfi

1. To begin, put the milk on the stove to boil.

2. Sprinkle some Saffron for extra fragrance and color. You may also leave it out if you wish.

3. Simmer the milk on low heat until it gets reduced to around 400ml. Stir sometimes in between.

4. Add in 4tbsp sugar, kewda water, half of the dry fruits and 2 tbsp milk powder. Mix well until the sugar dissolves.

5. Cook for another 5-7 mins. Turn off the flame and set aside to cool.

6. When the milk mixture cools down, add in the remaining dry fruits and transfer the mixture into a mug.

7. Pour the mix into the moulds and let them set in the freezer for 5-7 hours.

8. To serve, demould the kulfi by dipping the kulfi mould in a bowl of water. Rub it with hands to loosen the kulfi. Take it out of the mould and serve.
