1. For the first step, soak the pav/ bread slices in water for 10-15 minutes. Then, squeeze the water out of the pav completely
2. In a separate bowl, add in minced mutton, coarsely powdered coriander seeds, crushed green chillies, ginger garlic paste, chilli flakes, salt, lemon juice, garam masala powder, the squeezed-out pavs and coriander leaves. Mix all these ingredients until well combined.
3. For the smoky flavour, make a small space in the midst of the bowl with the minced mutton mixture and place a small bowl in that space.
4. Into that small bowl, place a burning piece of coal. Pour some oil over the still hot coal. Cover the minced mutton mixture immediately with the coal still inside and let it rest for 10 minutes.
5. When 10 minutes have passed, take out the coal and refrigerate the mixture for atleast 1 hour.
6. Take out of the refrigerator, and add in chopped mint leaves. Mix well.
7. Make cutlets out of the mixture according to the size you want.
8. Coat the cutlets in some breadcrumbs on both sides.
9. Make light slits on the cutlets with a knife in a grid pattern on both sides to allow them to cook well.
10. To fry, heat some oil in pan. Dip the cutlets in whisked egg and fry on medium flame until golden brown on both sides.
