Ingredients
4 Tbsp Curd
Salt
1/2 Tsp Turmeric Powder
1 Tsp Lemon juice
500 gms Chicken
2 Tbsp Coriander Seeds
10-15 Black Pepper Corns
4 Cloves
1/4th Tsp Dried Fenugreek Seeds
1 Tsp Cumin
4 Dried Red Chillies
1 Tsp Red Chilli Powder
2 Tbsp Ghee
10-15 Curry Leaves
1 Small Piece Of Tamarind
2-3 Tbsp Water
1 Tsp Jaggery Powder
Steps
1. Marinate 500 gms Chicken in Curd, Salt, Turmeric Powder and Lemon Juice. Cover and keep it aside for 1 hour.
2. In a bowl, take Coriander Seeds, Black Peppercorns, Cloves, Fenugreek Seeds, Cumin seeds and Dried Red Chillies. Roast all the spices in a pan till aromatic and slightly changes in color. Turn off the flame and let it cool.
3. In a mixer grinder, put roasted spices add a small piece of soaked tamarind and Garlic Cloves. Add water and grind everything in a fine paste. Lastly add Red Chilli Powder in the paste and mix well.
4. In a pan heat 2 Tbsp Ghee and roast the marinated Chicken on high flame. When one side turns slightly brown, flip and roast the other side.
5. Cover and cook the Chicken for 10-12 minutes on low flame.
6. In a wok heat 2 Tbsp Ghee, add Curry Leaves and grinded paste. Saute it for a while on high flame. Add Water and again sauté it for 8-10 minutes.
7. After 12-15 minutes the Chicken is cooked properly. Add roasted Chicken in the above gravy. Cook it on high flame for 4-5 minutes.
8. Finally add Jaggery Powder and cook it on high flame for 2-3 minutes.
9. Hot and Spicy Chicken Ghee Roast is ready to serve.
