Muton Pulav is a rice preparation cooked with mutton using a variety of spices. This recipe is a time saving recipe where i have cooked the pulav in a pressure cooker which is simple to make.

Simple Pressure Cooker Mutton Pulav
Ingredients
• 1 Onion sliced
• 250gm Mutton
• 1/2 Tsp Black Cumin
• 2 Indian Bay Leaves
• 2 Cinnamon
• 1 Black cardamom
• 2 Cardamom
• 3 Cloves
• Salt to Taste
• 1 Tbsp Ginger Garlic Paste
• 1/2 Cup Water
• Coriander Leaves
• 4 Green Chillies
• 1 Nutmeg
• some Mace
• less than 1 Star Anise
• 1/2 Cup Curd
• 1/2 Tsp Garam Masala Powder
• 6 potatoes
• 3 Green Pepper
• 1/2 Cup Water
• 250gm Rice (soaked for 1 hour)
• Fried Onion
• Coriander Leaves
Steps
1. In a pressure cooker, heat some oil. Add in sliced onions and mutton, black cumin, bay leaves, cinnamon sticks, black cardamom, green cardamom, cloves, salt and ginger garlic paste. Stir and mix well.
2. Pour in ½ cup water and close the lid of the pressure cooker.
3. Cook on high flame until the first whistle. Then lower the flame and cook for another 5-6 minutes until the mutton is tender.
4. In a separate bowl, take some coriander and 4 green chillies. Put them in a mixer and make a fine paste out of it using a little water. Keep aside.
5. Make a fine powder out of the nutmeg, mace and star anise. Keep aside.
6. In a separate bowl, whisk the curd. Then, add in the prepared chilli coriander paste and the ground powder. Also add garam masala powder. Mix till well combined.
7. Open the lid of the pressure cooker and ensure that the mutton is well done. Then turn the flame on high and cook for around 2 minutes.
8. Lower the flame and add in the prepared curd mixture, salt, potatoes and green chillis.Mix well.
9. Bring the mixture to a boil on high flame.
10. Next, pour in ½ cup of water. Add the rice and with the flame on high, mix all these ingredients well.
11. Cover the lid and cook on high flame until two whistles.
12. Turn off the flame and wait for the pressure to release before opening. Let it rest for 10-15 mins at least.
