Special Kesar Badam Ka Sharbat
Ingredients
1/3rd cup Almonds i.e. 75 grams made into almond paste
1 pinch Saffron
1 tablespoon Corn flour
1/4th Cup Milk
1/3rd cup Water
1/2 tablespoon Sweet Basil seeds
3 cup milk i.e.750 ml
3 Cardamoms
1/3rd cup Sugar i.e.5 tablespoon Sugar

Steps
Take 1/3rd cup almonds, firstly soak them in water hot water for 15-20 minutes, remove them from the water and use your fingers to remove the peel they will slip right off.
By adding a little water in a mixer grind these almonds into a fine paste and make almond paste.
Soak saffron strands in little hot water, as it will give you a very nice colour when added to the milk.
Take 1 tbsp cornflour, add 1/4th cup of milk to it, mix it and keep it aside.
Soak 1/2 tbsp of basil seeds in little water for 15-20 minutes and keep aside.
Heat 3 cups of milk in a kadai, use whole milk, when the milk starts boiling keep it stirring and cook for 3-4 minutes on medium to low flame.
Add 3 cardamoms to the milk open the upper part of the cardamom and then add it.
By adding cardamom, the milk will give a good flavour, after the milk is properly cooked you can remove the cardamom pods and discard it.
After cooking for 3-4 minutes add the almond paste that you have made to the milk, keep stirring on low flame as the almond paste may stick to the bottom of the kadai. Cook it for 5-6 minutes on low flame.
After that add 1/3rd cup of sugar to the milk, keep stirring till the sugar melts.
Then take the cornflour mixture that you have made before give it a mix as the cornflour settles down and then add this cornflour mixture to the milk.
Cook it on low flame for 4-5 minutes, keep stirring so that lumps are not formed in the milk.
Cook till the milk turns a little thick and the corn flour is properly cooked with the milk.
Scrape the sides of the Kadai in between, after cooking it for 5 minutes add the saffron water to the milk and mix it.
You will see a nice yellow colour kesar almond milk because of the saffron.
Simmer it for 1 minute on low flame keep stirring and then off the flame.
Remove the cardamom pods from the milk and let it cool down.
Transfer the Sharbat milk into a bowl.
Take a few Almonds and Pista chop it for garnishing the almond milk.
You can serve this Kesar Badam sherbet hot or chilled as you like.
If serving chilled then cover the bowl with a tight-fitting lid to avoid the formation of a cream layer on top and let it cool to room temperature. Refrigerator the milk for 5-6 hours and serve chilled, garnish it with chopped dry fruits and soaked basil seeds.
A hot glass of this delicious drink is great to sip just before sleeping for a peaceful sleep, serve it chilled in summers and piping hot in winters, it tastes great both ways.
