2 Big Potatoes
2 Tbsp Oil
One Tsp Cumin
5 Dried Red Chillies
Pinch of Asafoetida / Hing
½ Tsp Crushed Ginger
2 Green Chillies Chopped
½ Tsp Ginger Powder
½ Tsp Red Chilli Powder
2 Tsp Coriander Powder
½ Tsp Cumin Powder
¼ Tsp Garam Masala Powder
½ Tsp Jaggery

Steps
In a pan, heat 2 tbsp oil. Once heated, add 1 tsp zeera and dried red chillies.
Into that, add hing/asafoedtida for a fragrant flavour. Cook this mixture on a low flame for half a minute
After an interval of half a minute, add in grated ginger (paste is also okay), chopped green chillies. Toss this mixture for another half a minute.
Add cubed potatoes, red chilli powder, coriander powder, cumin powder and salt to taste. Stir lightly for 2-3 minutes until the spices are well done.
Pour in 500 ml water and bring the mixture to a boil on high flame.
Once the water starts to boil, lower the flame. Cover with a lid and simmer for 10-12 minutes. Keep an eye on it and stir once or twice in between.
After cooking for around 15 mins on low flame, take out 3-4 pieces of potatoes from the gravy. Mash them with the back of a spoon.
Add the mashed potatoes back into the gravy to make it thick and tasty
With the flame still on low, add garam masala powder, jaggery (jaggery is optional, you may skip it if you don’t want it to taste slightly sweet) and hara dhaniya (coriander leaves).
