This recipe is for most Indians who prefer baking in a pressure cooker or those who doesn’t have oven at home. It’s pretty simple with basic ingredients that yields a soft, moist eggless sponge cake. Add frosting of your choice, use as a base in different desserts or just enjoy it plain as an evening snack.

Ingredients
• 1 CUP SALT
• 1 CUP CURD
• ½ CUP OIL
• 1 CUP CASTOR SUGAR
• 1 & ½ CUP ALL PURPOSE FLOUR
• ½ CUP MILK
• CAKE TIN
• BUTTER PAPER
• ½ TSP VANILLA ESSENCE
• 1 TSP BAKING POWDER
• ½ TSP BAKING SODA
Steps
• Pre heat a pressure cooker by adding 1 cup salt (cooking salt). Place a ring or bowl upside down inside the cooker. • Close the lid of pressure cooker without whistle and gasket. Pre heat on a medium flame for 10 minutes. • In a mixing ball, add curd, oil (cooking oil) and powdered sugar. • Beat these ingredients using a beater. You can also use a whisk but it would comparatively take more time. • For beater it takes 4-5 minutes and with whisk it takes 8-10 minutes. • For dry ingredients – take all-purpose flour (sieved), keep adding gradually to the mixture. • Keep stirring and mix slowly. Next, add milk little by little and keep mixing. • Grease a cake tin with oil from all sides. Place a butter paper in the tin. • If you do not have butter paper, sprinkle some all-purpose flour in the tin and coat evenly. • Add vanilla essence, baking powder and baking soda to the mixture. Mix. • After adding the final ingredients, do not wait for long and set the batter to bake immediately. • Pour the batter in the cake tin and tap it on a flat surface. • Pre-heat the cooker properly, lower the flame and carefully place the cake tin inside the cooker. • Cover with lid. Do not add whistle and gasket to the lid. • Cook on high flame for 5 minutes then adjust on low flame and cook for 30-35 minutes. • To check the cake, insert a knife in the middle. It should come out clean and un-sticky. • Remove the tin carefully from pressure cooker, let it cool down. • Scrape the cake from sides using a knife. Place a plate on top and turn it upside down to demould. • Remove the butter paper, cut into slice or add frosting of your choice to serve.
