This is an Indian potato and bread snack which was originally made by cutting bread into circles with a cutter, which was then slathered with a spicy potato filling, and deep fried! It looked like tiny circles of gold, and hence someone decided to call it just that!

Ingredients
2 Potatoes of medium size
3 tablespoon Peas
Fresh Coriander
1 teaspoon chopped Ginger Garlic
Half teaspoon Red Chilli Powder
1 teaspoon Cumin Powder
1 teaspoon Chaat Masala
1 tablespoon Tomato Ketchup
Salt
Butter
Chutney
Cheese
Coriander
Steps
Take 2 potatoes of medium size boil and mash it add 3 tbsp boiled green peas, some freshly chopped coriander leaves, 1 tsp chopped ginger garlic, half tsp red chilli powder, 1 tsp cumin powder, 1 tsp chaat masala, 1 tbsp tomato ketchup, little salt mix all these ingredients well.
You can store this mixture in the frigde for 3 to 4 days in an airtight container.
You can add boiled sweet corn, chopped carrot or capsicum, if green peas are not available.
Veggies like onion and tomatoes are a big no for this recipe, because they will leach water when frozen.
If you want to add onions you can add them while just before cooking it.
Take 4 big size bread slices, cut them in round shape from between with a round cutter.
Make a half inch layer of the potato mixture on this round bread slice.
You can make 4 cheesy coins out of this potato mixture.
Preheat a pan on low flame add some butter to it, now place the coins facing the potato mixture downwards in the pan and let it fry on medium flame for 3 to 4 minutes, so that the potato mixture turns crispy.
After 3 to 4 minutes flip the coins to cook on the bread side.
After turning it apply some mint chutney on the potato, sprinkle some grated cheese on top of it.
Garnish it with some chopped coriander leaves also.
Cover it and cook till cheese melts and the base of the bread turns crispy.
Serve it with tomato ketchup or mayonnaise.

Tips *Make sure the mashed potatoes are smooth without any lumps. *You can add finely chopped onions, green chilies, or herbs for extra flavor. *To make the gold coins healthier, you can bake them instead of frying. *Adjust the chillies in the chutney acvording to your kids taste.
