400 gms Boneless Mutton
½ tsp Salt
¼ tsp Turmeric powder
1 tsp Ginger Garlic Paste
1 Tomato
3 tbsp Curd
1 tsp Coriander powder
1 tsp Red Chilli powder
¼ tsp Cumin powder
1 Onion finely chopped
½ tsp Chilli Flakes
¼ tsp Garam Masala powder
¼ tsp Black Pepper powder
¼ tsp Dry Fenugreek Leaves
3 tbsp Oil
2 Bay Leaves
1 tsp Ginger Garlic paste
Fresh Coriander chopped
Green chillies
Ginger julienne
Steps
Pressure cook the mutton with salt, turmeric, ginger garlic paste and tomato (peel the skin) with less than ½ cup of water. Cook on a high flame for one whistle and on low flame for 10-12 mins or till mutton is tender.
Beat the curds in a bowl add coriander powder, red chilli powder, cumin powder, garam masala powder, black pepper powder, chilli flakes, fenugreek leaves and mix it with the curds.
Heat oil in a flat iron tawa, put bay leaves, onion and fry it on low flame for 3-4 mins till onion is soft. Add ginger garlic paste and stir it well.
Put the cooked mutton in the tawa and fry the mutton for 3-4 mins on a high flame.
On low flame add the curds mixed with masalas, salt and stir it well. On high flame cook for 2-3 mins till spices are properly cooked are coated on the mutton pieces, add mutton stock left in the pressure cooker. It’s a dry recipe so adjust the gravy as per choice.
Garnish it with coriander leaves, green chillies and ginger julienne.
