When I am lazy thinking about breakfast or evening snacks, this healthy Veg mayo sandwich recipe is a go-to recipe in our house. I have used eggless mayonnaise in this recipe. But you can use any mayonnaise.
Some people like to eat this as a cold sandwich but tastes good when toasted or grilled as well. You can also ask your child to make this vegetable sandwich recipe, as this does not require any fire for cooking.

There are many ways a veg mayonnaise sandwich can be made. Here I give you the basic method for preparing the mayo filling and constructing the sandwich as well as tips on ingredients and seasonings. Once you have the basic idea, feel free to adapt the recipe to your preference.
It is also easy to prepare the mayo stuffing and have it ready to add to bread for a quick lunch or snack throughout the week.
This recipe includes grated carrots and chopped bell pepper (capsicum), however feel free to add different or additional veggies, including cabbage, steamed corn kernels and steamed green peas.
This recipe for mayo sandwich is extremely simple and can be prepared with any choice of breads. But it is typically prepared with white bread and by trimming the edges of sandwich breads. While it is not mandatory to trim it, but it makes it visually better dish and more appealing. Further I have used a basic eggless mayonnaise in this recipe but any flavoured mayo should also taste great for this recipe. Ideally garlic mayo, chilli mayo and even cashew mayo can also be used for this recipe. In addition I have used veggies like sweet corn, different coloured capsicum and grated carrot. But it can be easily extended with other veggies like spinach, mushroom and even jalapeno for dressing.

Ingredients
2 tablespoon Mayonnaise
1/4th teaspoon Mixed Herbs
Some Chili Flakes
Chopped Cabbage
Chopped Carrot
1 small chopped Onion
Some boiled Sweet corn
Bread slices
Green Chutney
Boiled Potato slices
Tomato slices
Chaat Masala
Oil
Steps
In a bowl take 2 tablespoon mayonnaise, add 1/4th teaspoon mixed herbs, some chili flakes, chopped cabbage, chopped carrot, 1 small chopped onion, some boiled sweet corns mix it well.
You can prepare this mixture at night, store it in an air-tight container in the fridge and use it in the morning. Your sandwich will be prepared in 5 minutes.
Take 2 brown bread slices, apply some green chutney on them.
Spread the mayo mixture on the slices, place 2 potato slices and 2 tomato slices on the mixture then sprinkle some chaat masala on the veggies. And then close it with the other slice of bread.
Prepare the remaining sandwiches in the same manner. You can grill or toast these sandwiches. We are going to toast them in a pan.
Preheat a pan spread some oil, butter or ghee on the pan and toast these sandwiches till crispy from both sides.
Serve it hot with tomato ketchup.

Tips *Just be sure that the proportion of veggies to mayo gives you a nice consistency so that it spreads well on the bread. *Any bread can be used, but for a healthy version include whole wheat bread or brown bread or multi grain bread.
