Ingredients
3 Tbsp Oil
3 Tbsp Ghee
1 Black Cardamom
2 Cinnamon
4 Cloves
500gms Mutton
1 & ½ Tbsp Ginger Garlic Paste
3-4 Green Chillies crushed
2 Tsp Red Chilli Powder
2 Tsp Coriander Powder
Half a Pinch Turmeric Powder
2 Tbsp Curd
1/4th Cup Water
5 Green Cardamom
Seeds of 2 Black Cardamom
Small Pc Nutmeg
Few Mace
¼ th Cup Fried Onions
½ Tsp Garam Masala Powder
Paste of 4-5 Cashew Nuts
2 Tbsp Curd
¼ th Cup Water
For Raita
1 Tsp Oil
½ Tsp Garlic chopped
1 Onion chopped
1 Capsicum chopped
1 Tomato chopped
1 Cup Curd (200 gms Curd)
Salt
½ Tsp Sugar
Black Pepper Powder
2 Green Chillies chopped
½ Cucumber chopped
Coriander Leaves
Ginger Juliennes

Steps
1. Heat 3 Tbsp Ghee and 3 Tbsp Oil in a pressure cooker pan, put Black Cardamom, Cinnamon, Cloves, 500 gms Mutton, Ginger Garlic Paste and sauté it for 5-7 minutes on high flame.
2. Add crushed 3-4 Green Chillies, Red Chilli Powder, Coriander powder, Turmeric Powder and Curd. While adding Curd keep the flame low and Mix it well for 1-2 minutes.
3. Increase the flame and roast for 4-5 minutes on high flame. Cover it with the pressure cooker lid and let it Cook on high flame for 1 whistle for around 8-10 minutes.
4. Take Green Cardamom, Seeds of Black Cardamom, Small Pc Nutmeg and Few Mace. Grind all the spices in a powder form.
5. Take Fried Onions and crushed it coarsely. Mix grinded spices, Garam Masala powder, Cashew Nuts paste and Curd. Mix it well.
6. After 10 minutes, Mutton is cooked properly. Add the mixture and Water in it. Mix it well and Let it boil on high flame.
7. Cover with the lid and let it cook on low flame for 8-10 minutes.
8. For Raita- In a wok, heat 1 Tsp Oil add chopped Garlic and sauté it until golden in color. Add chopped Onion, Capsicum and Tomato. Saute it for 1 minute on low flame and off the flame.
9. In a bowl take 1 cup Curd add Salt, Sugar, Black Pepper Powder and beat it well. Add chopped Green Chillies, Cucumber, Coriander Leaves and all the fried Vegetables. Mix everything properly.
10. The Mutton gravy is ready and oil is separated too. The consistency of the gravy is neither too thick nor watery.
11. Add Ginger Juliennes and Saffron Water. Cook it for 1 minute on low flame.
12. Serve hot and tasty Zafrani Mutton Korma with Tandoori Roti and sliced Onion.
