1 Cup All Purpose flour
Salt to Taste
1 Tsp Oil
150gm White Peas
Salt to Taste
½ Tsp Turmeric Powder
2 Tbsp Oil
1 Tsp Ginger Garlic Paste
½ Tsp Turmeric Powder
1 Tsp Cumin Powder
1 Tsp Chilli Powder
1 Tsp Coriander Powder
Salt to Taste
2 Boiled Potatoes
Some Fresh Coriander Leaves
¼ Tsp Garam Masala Powder
1 Tsp Gram Flour (Make Slurry)
10 Leaves of Kokum (Garcinia Indica)
Some Jaggery or Gur
1 Garlic Clove
5 Chillies

Steps
Preparing the dough for the poori. In a vessel add All Purpose flour, oil and salt. Mix well and make dough. Cover and keep for half an hour.
Make a big roti from the dough and use a small round vessel or katori to cut out small puris form the roti and fry them in a pan.
Make ragda by taking white peas in a bowl, add salt, turmeric powder and water. Pressure cook till one whistle.
Take a pan with some oil and add ginger garlic paste, turmeric powder, cumin powder, chilli powder, coriander powder, salt to taste, soute for some time on a low flame.
After roasting the above spices for some time add the white peas mentioned in step 3 and also add some potatoes cut into pieces. Cook on a high flame till the potatoes and peas are cooked well. Add some coriander, garam masala powder, and boil in high flame.
Now add gram flour slurry to make it thick.
Make kokam chatney by soaking kokam leaves in water and add some jaggery and salt to it.
Make green chuntny of chillies and garlic by grinding them to a paste also add salt to taste.
Now make the Alu Puris by topping the ragda with some green chutney, kokam chatney, fried onions, and chopped raw onions.
