Umm Ali is a bread pudding layered with puff pastry, milk, and cream, and sprinkled with lots of nuts, raisins and its So delicious!
Umm Ali is a delicious Egyptian dessert equivalent to North Americas bread pudding. You can serve it warm with a scoop of French vanilla ice cream.
The dish, which is traced back to as far as Medieval Egypt, is named after the wife of the Sultan of Egypt. It is commonly eaten during Ramadan as part of the iftar or sunset feast.
You will be relished by the creaminess of this bread pudding. With a top layer of crisp, making you dive in for the next bite and another till you reached the bottom of the bowl. Each bite is satisfying with its newness and yet familiarity.
After a filling lunch and quick chat with father and mother of Ali, I learnt that Om Ali or Umm Ali is a common celebratory bread pudding popular not only in Egypt but in various countries in the Middle East.
This decadent, authentic Egyptian bread pudding goes by the name of “Umm Ali” and is a breeze to make! Bread Slices are smothered with a sweet cream and milk mixture and topped with an array of nuts, raisins. Delicious and the prefect dessert for a gathering!
What does Umm Ali mean? It literally translates to “Ali’s Mother” and some history sources report that it was named after a Sultan of Egypt who goes by the name of Izz Al-Din Aybak. His wife was known as “Umm Ali” and once made this dish and distributed it widely and it became known by her name. You may also find it spelled as “Om Ali” or “Um Ali”.
Some of my favourites are this Egyptian Goulash, macarona bechamel, or this ful medames. But when it comes to desserts, this Egyptian dessert recipe cannot be beat and is one of my favourites amongst many other middle eastern desserts.

Authentic Umm Ali Arabian Pudding
Ingredients
Half litre Milk
Half tablespoon Custard Powder
3 tablespoon Sugar
1/3rd Cup Condense Milk
1/4th teaspoon Vanilla Essence
Bread Slices
Almonds and Pistachios
150 Grams Thick Cream
1/4th Cup Condensed Milk
Dry Fruits
Steps
Take half litre of milk in a pot add half tbsp custard powder, 3 tbsp sugar, 1/3rd cup condense milk, 1/4th tsp vanilla essence, mix it well and then keep to heat it, cook for 3 to 4 minutes on medium to low flame, keep stirring till it starts thickening.
Take 5 bread slices, cut the edges of the slices, then cut each slice into half piece. Now take a serving dish in which you can to prepare the pudding.
Arrange the base of the dish with the bread slices.
After arranging the bread slices in the dish, pour the cooked milk mixture evenly on the bread slices, then sprinkle some chopped Almonds and pistachios on it.
Keep it in the refrigerator for some time.
Take 150 grams chilled thick cream, add 1/4th cup condensed milk, now whisk it with a hand mixer or whisker till soft and creamy.
Now remove the pudding dish from the refrigerator and pour this creamy mixture on it evenly so as it should cover the whole Pudding.
Now you can bake it in the oven on 180 degree celsius for 15 to 20 minutes, or you can have it without baking also.
Garnish it with chopped dry fruits of your choice.
While serving add the thick cream in spoonful all over, smearing them slightly.
Serve it immediately.

Tips * Buffalo full-fat milk, sold at milk shops, gives this dish the best flavor and creamy texture. * Feel free to leave the nuts out, increase or decrease them as you like.
