Baida roti is an iconic street food in Mumbai that is made with stuffed egg. Here is how you can prepare a chicken version of it at home
Shallow-fried Indian bread, baida roti is stuffed with egg and slightly bigger in size than a paratha. While the origin of Baida roti is not known, this simple dish is hugely popular in Mumbai due to the iconic eatery Bademiyan in Colaba. The eatery serves a variety of baida rotis, including the ones with chicken or mutton mince stuffing. The eatery is a perfect hotspot for after-party munching at midnight! Baida roti is actually very simply to make but has a complex flavour and texture. Soft, succulent and flavourful from inside, baida roti has a crispy outer layer which looks like puff pastry.
The iconic recipe is made with eggs but one can always go an extra mile and add some mutton or chicken chunks to make it all the more wholesome and tastier. Here we have a simple and easy baida roti recipe you can try at home too!
Baida Roti takes me back to my Childhood days where Mom and Dad would take us to the street carts at Crawford Market or Bade Miyan in Colaba, South Bombay to enjoy the most Mouth watering Baida rotis we have ever enjoyed.
Usually Baida Roti is best enjoyed and easier to make and fold when the dough is made of All Purpose Flour(Maida).
The whole taste of Baida Roti lies in the Smokiness of the Hot Iron Tawa that is used on the street carts. It may differ a little when you make it at home, but nevertheless, the joy of making these stuffed Keema and Egg Rotis and getting it right without making a mess, is pure Bliss

Ingredients
2 cups Refined Flour- 250 grams
1 teaspoon Powdered Sugar
1/2 teaspoon Salt
1 teaspoon Oil
Water
Oil
2 tablespoon Oil
1/2 teaspoon Cumin Seeds
300 grams minced Mutton
1 & 1/2 teaspoon ginger-garlic paste
less than 1 teaspoon Salt
1 teaspoon Chilli Flakes
1/2 teaspoon Cumin Powder
2 teaspoon Coriander Powder
2 pinch Turmeric Powder
1/2 teaspoon green chilli paste
1 medium size Onion
2 teaspoon coarsely Grounded Coriander
1/4 tsp Garam Masala
1 teaspoon Lemon Juice
Oil
1 Egg
Pinch of Salt
2-3 teaspoon Onion
Green Chilli
Fresh Coriander
Oil
Steps
The first step is to make the dough ready, so let us start.
In a bowl take 2 cups of refined flour that is 250 grams of flour( maida), one teaspoon powdered sugar, half teaspoon salt, mix the salt and sugar with the refined flour , then add water gradually and knead into a semi soft dough.
Add some oil on it and then cover it with a plastic and let it rest for 15-20 minutes.
By this time let us prepare the Keema.
Heat 2 tbsp of oil in a pan, add half tsp cumin seeds, when the seeds start changing colour, add 300 grams of Mutton Keema , you can use Chicken Keema also.
Add 1 & 1/2 tsp ginger-garlic paste, less than half teaspoon salt and fry the keema on high flame for 3-4 minutes.
Keep frying the keema by stirring so if any lumps are there they will get dissolved.
After frying for 5 minutes on high flame to medium flame, now reduce the flame, add one teaspoon Chilli flakes, half teaspoon cumin powder, 2 tsp coriander powder, 2 pinch turmeric powder, 1/2 tsp green Chili paste.
Mix all these masalas with the Keema, do not add water now, cover and cook till the Keema is done on low flame for 10-12 minutes
Keep checking in between if required at little water.
When keema is cooked, add one medium size chopped onion, two teaspoon coarsely grounded coriander powder, 1/4 teaspoon garam masala powder, one teaspoon lemon juice mix all these ingredients with the Keema and cook on low flame for 2-3 minutes till the onion is little soft.
Keep stirring and make the keema in a dry mixture no water should be there. When done off the flame and remove this keema and keep aside in a bowl.
Now let us prepare roti .
Make equal balls of the dough, by this quantity of Atta you can make 6 Baida roti, place all the balls in a tray, pour half teaspoon oil on all balls, cover them and leave it for half an hour to rest.
After half an hour take one ball of aata, apply some oil on the board place the ball of atta and keep pressing it to make it bigger from all sides with the help of your fingers. Make a big thin roti.
Now take one egg in a bowl, add some chopped onions, chopped green chillies, chopped coriander, little salt and beat the egg with light hands.
One egg is going to be used in one roti, now place some mixture of keema in the centre of the roti , flatten the mixture, pour this beaten egg mixture on the keema slowly so the keema will absorb it.
After this fold the roti from all four sides to cover the mixture.
Prepare the other roti in the same manner.
Your Baida roti is ready.
Take an iron tawa, heat some oil in it, shallow fry the Baida roti on low to medium flame from both the sides so the eggs inside will also get fried properly.
Fry till golden brown, fry the edges also properly so that it may not remain uncooked inside.
Cut the Baida roti into pieces and serve it hot with mint chutney, sliced onions and lemon wedges.
