25 green cardamoms
25 cloves
½ tsp white pepper corns
½ nutmeg
3 - 4 cinnamon sticks
1 tbsp fennel seeds
¼ cup ginger powder
¼ cup dried rose petal leaves (optional)
Steps
Dry roast cardamom, cloves, nutmeg, white pepper corns, cinnamon sticks, fennel seeds in a pan on low flame for 1 to 2 minutes, so these spices become a little crispy and is easily grinded .
Now off the flame. Add rose petal leaves and stir it well with the spices so that these leaves also turn a little crispy.
Once cool down transfer these spices into a pat dry mixer jar, add ginger powder to it and then ground it into a fine powder.
Your chai masala is ready.
You can store it in an air tight container up to 3 months.
Method of how to make chai by adding this masala to it.
In a saucepan heat 1 cup water, 1 cup milk, add 2 tsp tea leaves (chai ki patti), 2 tsp sugar and bring it to a boil and cook on low flame for 2 to 3 minutes stir it in between .
Then add ¼ tsp chai masala to the tea and boil it for a second and then off the flame .
¼ tsp chai masala is sufficient for 2 to 3 cups of tea.
