3 tbsp Coriander Seeds
1 tbsp Cumin
1 tsp Mustard Seeds
½ tsp Fenugreek Seeds (methi dana)
½ tsp Black Pepper corns
½ tsp White Pepper corns
1 tsp Fennel Seeds
3 to 4 Bay Leaves
6 to 7 Cloves
6 to 7 Green Cardamoms
½ Mace Flower
¼ Nutmegs
2 Stick Cinnamons
Seeds of 2 Black Cardamoms
1 tsp Poppy Seeds (optional)
7 to 8 Cashews (optional)
8 to 10 Dried Red Chillies
1 tbsp Kashmiri Chilli powder
½ tsp Salt
¼ tsp Turmeric Powder
1 tsp Ginger Powder
1 tsp Garlic Powder
Steps
Preheat a pan on low flame dry roast the dried chillies for 2 minutes keep stirring and remove them and keep aside.
Now add coriander seeds, cumin, mustard seeds, fenugreek seeds, white and black pepper corns, fennel seeds, bay leaves, cloves, cardamom, mace, nutmeg, cinnamon, seeds of black cardamom, cashew and dry roast these spices for 2 to 3 minutes by stirring.
Then off the flame and add poppy seeds and mix it well with the hot spices.
When cool down pat dry mixer jar put all these spices into it along with roasted dried chillies and grind it into a coarse powder.
Then add Kashmiri red chilli powder, turmeric powder, ginger and garlic powder, salt and grind it into a fine powder.
