Cheese Chilli Paratha
Ingredients
• 1 cup all purpose flour (about 125 grams)
• ½ cup wheat flour
• Salt to taste
• 1 tbsp butter
• Chopped coriander
• 1 tsp chat masala
• 1 tsp chilli flakes
• 3 tbsp curd
• 1 boiled potato
• Mozzarella cheese
• Chopped coriander
• Chopped capsicum
• Chopped onion
• 1 chopped green chilli
• Chilli flakes
• Oil as per requirement

• For the paratha dough, in a bowl add all-purpose flour (maida), wheat flour, salt, butter, chopped coriander, chat masala, chilli flakes, curd and boiled potato (mashed). • Note – Add salt carefully as we’re also using chat masala and butter. • Before adding water to the dough, mix all the ingredients well. Knead the dough using minimal water. • Tip – for soft dough use water warm while kneading. • The dough for paratha is kneaded much like the dough for rotis. The dough kneaded should be balanced, not too firm or too soft. • Rub little oil over the dough, cover it with a cloth or a towel. Let it rest aside fir 30 minutes. • For paratha stuffing – grate mozzarella cheese (as needed) in a bowl, add chopped coriander, green chilli, capsicum, onion and chilli flakes. Mix everything well. • Note – You can use processed or cheddar cheese also. Capsicum and onion are optional. • After 30 minutes, apply some oil on hand and knead the dough again for 2-3 minutes. • Take one portion of dough, roll in a shape of ball and dust it into all-purpose flour. • Flatten the dough ball using a rolling pin, just like roti or flatbread. Make sure its not too thick or too thin. • Fold the paratha from two sides, place handful of cheese chilli stuffing in the centre and cover it up by folding the paratha from the other two sides. • Press and seal the edges using your fingertips to prevent cheese from falling out. Use fork to mark design over the edges. • On a hot tawa (griddle) place the stuffed paratha and let it cook on medium flame. • Now, apply ghee (oil or butter) on one side, flip and apply some more on the other side too. • Cover the pan with a lid and make sure both the sides are cooked thoroughly on low flame. You should see crisp brown spots on the paratha. • To enhance the taste, add some cheese stuffing on top of the paratha, cover the lid and let it cook on low flame til the cheese melts. • Serve them hot with curd, pickle or tomato ketchup.
